Seaweed soup (Miyeokguk: 미역국)

  • "Miyuk Guk" is made of seaplant and is traditionally eaten on your birthday or after giving birth, but you can eat anytime you like.
    Seaplant soup (Miyuk gook):
    4-6 servings
    Ingredients:
    1. 4 cups of soaked miyuk (1 cup of dried seaplant)
    2. 16 cups of water
    3. 4-5 tbs of fish sauce
    4. 200 grams of beef brisket
    5. 1 tbs of minced garlic
    6. sesame oil
    Directions:
    1. Soak 1 cup of dried miyuk in a big bowl for at least 30 minutes.
    2. Drain the water from the sea plant and cut it into bite size
    3. Place the soaked sea plant(about 4 cups) in a big pot and add 16 cups of water and boil it over high heat for 20 minutes.(later you may have to add more water if the soup is too thick)
    4. Cut the beef brisket nto bite size pieces.
    5. When the water starts boiling (about 20 minutes later), add the beef and 1 tbs of garlic. Boil it again for another 20 or 25 minutes over medium heat.
    6. Add 4 or 5 tbs of fish sauce(add more or less depending on your taste) and drizzle a few drops of sesame oil before serving.
    Seaplant salad (Miyuk muchim)
    Ingredients:
    1. 7 cups of soaked miyuk (about 2 cups of dried seaplant)
    2. 6 tbs of soy sauce (more or less depends on your taste)
    3. 1 tbs of sugar
    4. 1 tbs of minced garlic
    5. chopped green onion
    6. 4 or 5 tbs of vinegar
    7. sesame seeds
    Directions:
    1. Soak 2 cups of dried sea plant (miyuk) in a bowl at least for 30 minutes and then drain the water from it.
    2. Boil some water in a pot and add the soaked miyuk. Stir it with a spoon for 30 seconds .
    3. Take out the seaplant and then rinse it in cold water. Drain the water out by squeezing the seaplant gently.
    4. In a big bowl, put the seaplant and add 5 or 6 tbs of soy sauce, 4 or 5 tbs vinegar, 1 tbs of minced garlic, 1 tbs of sugar, 1 chopped green onion, and mix it up by hand.
    5. Sprinkle some sesame seeds on the top and serve it cold.

      No, nori (gim in Korean) and miyeok (seaweed used for this video) are different.

      @@blooming895 nori / gim turns to mush when exposed to hot water. For soups and salads you need wakame / miyeok.

    In Korea, there's a superstition among school students...they should not have seaweed soup before a big test. Because seaweed soup is slippery, students believe the seaweed will make the knowledge "slip" their minds. So if a Korean student does poorly on a test, he/she often says, "I had seaweed soup last night!"

    Thank you for sharing so many Korean tradition food. I wish I could learn this soup many year ago. I love seaweed because my parents and my relative like to make seaweed dishes all the time. Once I knew there is Korean seaweed soup from Korean drama and I wanted to try. Unfortunately this soup are not available in a Korean restaurant. I believe this soup like Korean home made soup. These 2 months I am always visit your website all the time and I finally found this recipe. It is really great taste with beef brisket. I also teach my mom how to make this soup.     I know this video is eight years old but, I just mad both the soup and the salad.
    The salad was absolutely delicious. I'll be making it over & over again. The soup also was so good. I added two packets of Japanese Hondashi for an extra kick of flavor. It absolutely put it over the top for deliciousness.

    I just wanted to tell you that the thing you've started doing with the minced garlic is ingenious, when I get home, I'm going to take that big bag of garlic I get at CostCo and peel it and food process it and put it in the freezer!     Yes, I think that's miyuk salad. Sometimes, you will find salad that looks like shredded seaplant which is made of miyuk stem.

    Yesterday I went to my favourite Asian grocery store and they had this kind of sewed for only one dollar. Of course, I had to buy it. Now I want to make this when I am stuck away from my family for easter pga. Corona. It would be awesome if you made a new video for this soup 😊

    Yes, the fish sauce is very very salty. If it is too bland for you, add some more fish sauce or salt after making it. I like soup which is not salty. Thanks!

    That's a very good point that you are worried about loss of some nutrients such as iodine when the seaplant is soaked and rinsed. However, I will rinse it because I am also worried about eating the dust that accumulates when it is being dried.

    When you make soup using beef, beef should be added in boiling water. If you put the beef into cold water and boil it, blood from the beef will come out and the soup will look brownish. You can check out my radish soup video where I used the same method.

    When I lived in Korea, someone made this for us, but they didn't have any meat in it. I think it would have tasted better with some beef. Thanks for this recipe.

    One of my favourites... I've made it a few times. I like to use a little beef stock in it for flavour. Also I make one that doesn't have the beef brisket in it. The one without the beef I use the dried anchovy stock.

    I have made this soup from memory and taste before but was unsure if I got it right. My method was a tiny bit different but correct for the most part. The only thing I left out was the fish sauce. While I did use soy sauce, I think the fish sauce would make the soup closer to what I used to have every year for my birthday. I am certainly going to have to try this again!

    bertinintowncenter, I think the corned beef brisket is cured to retain the red color we associated with corned beef. It also has a flavor even without adding the spice pouch (which I think is mostly for aroma).

    @dyanjennica09 yes, when it's soaked, it will have strong flavor but it's usual. Check the package of the sea plant you have. Does it say "미역" (miyeok)? If so, you got the right ingredient.
