You should try Sky Deck before sunset and watch the sun set over the city. We did this last May and it was amazing.
Also highly recommend Operator 25 for coffee and breakfast and Rockpool restaurant for dinner.

@@TravelKiwi the other really great surprise we had was in Sydney. We booked 4 nights at the Wildlife Retreat at Taronga Zoo. We were there at the beginning of Vivid which was great, but seeing the animals before the zoo opened or after it closed on their complimentary tours was beautiful. But really special having some animals only in the retreat, oh & watching the night time feeding of resident platypus Mackenzie.
It was so chilled, we will use that as a post UK-Aus flight recovery spot the next time we come down under
