Recipe: Pickled Green & Fresh Red Strawberry Salad

Serves 1 or 2 to share
INGREDIENTS:
1 handful of young green strawberries
1 handful of ripe red strawberries
3 sprigs of young tarragon
3 sprigs of wild fennel
100ml cyder vinegar
2 tbsp caster sugar
1 lemon
2 radishes
1 tsp capers
200g hang op
200ml double cream
10 black peppercorns
Sea salt
Black pepper
METHOD:
Pour the cyder vinegar into a small pan and add two tablespoons of caster sugar and a big pinch of sea salt. Add black peppercorns, two sprigs of tarragon, water and bring to the boil. Prepare the green strawberries by taking off the tops and add to a small mixing bowl and set aside. Once the pickling liquor has come to the boil, take off the heat, pour over the green strawberries and leave to sit for 1 hour.
In a large mixing bowl combine the hang op, double cream, pinch of sea salt and the zest of half a lemon. Whisk together and place in the fridge to set.
Remove the tips of the red strawberries, quarter and add to a second mixing bowl. Thinly slice the radishes and roughly chop the capers to add to the bowl. Remove the pickled green strawberries from the liquor and cut in half. Add a few sprigs of wild fennel, roughly chopped through. Pick whole leaves of tarragon off the final sprig and drop in. Add half a tablespoon of pickling liquor. Combine with a good drizzle of olive oil, pinch of sea salt and toss together.
Spoon salad into a bowl, finish with a lange scoop of salted yoghurt, a crack of black pepper and fresh tarragon leaves.
* For extra presentation points, garnish with borage flowers for added colour!
