2 sticks unsalted butter (1 cup)
1 1/2 cup white sugar
3 - 4 tsps vanilla
3 eggs + 3 yolks
1/4 cup J Wray and nephew overproof white rum
2 - 3 tbsps your favourite Appleton "red" Rum
2 tbsps vegetable oil
2 1/2 cup allpurpose Flour, sifted
1/4 cup Cornstarch, sifted
2 1/2 tsps baking powder
1/2 tsp baking soda
1 tsp Salt
1 & 1/4 cup Buttermilk
Sauce:
1/2 cup unsalted butter
1/2 cup white sugar
1 tbsp brown sugar
1/4 - 1/2 cup water
1/2 tsp vanilla
Salt to taste
1/4 cup J Wray and nephew overproof
1/4 cup Your favourite Appleton Estate "red" rum

How do you know when you over mix the batter?
If the ingredients have already come together and you're still mixing

How do you keep stored after baking?
Wrap it tightly and leave at room temperature for 2 days max (my preference). Or you may wrap and freeze or refrigerate for longer
Is there no baking powder or soda in this recipe
