I use both Fennel and Celery in my Soupe de Poisson Provencale and add a quantity of the Fennel tops only the green fuzzy parts! I would have taken the shrimp & scampi heads and shells, cleaned the fish and used the heads and bones, to make a rich seafood stock, water and white wine, you get all the flavor, but those poor Pollack were over cooked. I put my calamari in first as well and any delicate or small fish pieces at the last 1-3 minutes fo simmer along with my shrimp. Even large shrimp only need 90 seconds to 3 minutes max cooking time. Great with the cinnamon, over 20 years' time, and frequently eating from one end of the Med to the other, it was a long time before someone told me at a restaurant in Trapani, "Oh, that's cinnamon! It's a secret so don't tell anyone."
