That spinach pasta is a real winner. Went out to get spinach solely for this recipe and our 2 person household ate all of it in one sitting. Insanely good, you should be proud of yourself for that one.

Pasta is one of the things that got a lot tastier when I started searching for vegan recipes. There are so many possibilities
So many pasta-bilities...
I’m more inclined to make vegan Alfredo than non-vegan since the cashew cream thickens on its own and you don’t need to start with a roux. A splash of white wine adds some nice brightness to the dish as well.
These look amazing! If people are allergic to soy and nuts, or want a store bought option, I really like the Country Crock Plant Cream! It's handy to have on hand to save even more steps or dishes when I'm really running on empty 😊 if it's too heavy, I just thin it out with plant milk!

These dishes all sound absolutely delicious! What I'm put off by is that the homogenous look they get from blending all the ingredients smooth makes them look like they are covered in paint. I'm going to try to give them more texture and less paste look when I cook them, e.g. by cooking the spinach beforehand and not blending it all in with the cashew cream altogether but keeping some of it as specks of color and texture, maybe even leave some cashews unblended and instead crush and roast them

i love these! i have got to try that spinach pasta, maybe add some basil as well. also, i make my vegan alfredo in an almost identical manner!! my main differences are a little bit of that salted pasta water and i use the country crock heavy whipping cream alternative :)

I always make the spinach pasta with silken tofu and whole dried red chili (you can get it from any indian grocery store) and it always turns out very nice.

I use watered down hummus as cheap alternative to cream, it might not be as smooth but in my country it's hard to find silken tofu and cashews are expensive af

Such a pity these videos aren't given more attention. I can say that watching these did teach me a completely new way to cook vegetarian without it being boring and the commentary is always fantastic, perfectly laying out all the important stuff without unnecessarily prolonging the video. I know shorts are the trend now, but I do hope you continue with creating vids as well :)

Just made the alfredo with tofu (used firm tofu with water blended because store didnt have silken) and the nutritional yeast and omg its so good tastes like i remember normal fettucini tasting. Gonna try it with the vegan chicken next time

what is in italian seasoning?
How much salt should you add to the sauce or none? Should you just salt the pasta water and not the sauce? Also can you use store bought vegan heavy cream?
Salt the sauce your preference, I don't think I needed any after adding the pasta and water to tell the truth, and yes you can use store bought vegan heavy cream!

The alfredo looks good! And since there is no such thing as an authentic italian alfredo sauce (it's an italian-american dish) you don't have to worry about heated italian commenters :p

how is your alfredo lighter than it's dairy counter part when you are using the cream of one of the most calorically dense nuts + butter ? can you explain how that works cuz i cant see how a vegan alfredo is lighter than a regular alfredo, if u wanted to make a light alfredo u'd need a cauliflower based sauce which is arguably a lesser tasting sauce than the calorically dense dairy or the arguably Havier vegan one. unless you are talking about mouthfeel, I don't see how the vegan sauce being lite works. as even for mouthfeel adding water could make either one seem lighter... it might be lighter on the conscience but definitely not on the calories. I may be over estimating the amount of calories that is in the cashew cream but im highly skeptical as a heavy dairy cream is still 100/200 calories behind its cashew counterpart if im not mistaken.

You can use silken tofu, but I'm not talking calories, but in how the dish itself feels and myself after eating it.
A half cup of cashews is 377 calories. A half cup of heavy cream is at least 408 calories (there are more dense options of heavy creams).
You could have just googled instead of speculating.
