Greetings Chris: I made this dish for my family over the Christmas Holiday (2014) and they absolutely loved it, especially my grandson! Of course I tweaked it to my liking but it was actually very easy to make. There was nothing raw about this recipe & the way the favorites came together was unbelievable! Chris made this last night and it was delicious. I put half of the scotch bonnet afraid of the heat but next time I will use the whole pepper. Lastly I put tablespoon and half of curry powder (Chief brand) but I wanted a stronger curry flavor so I will also up my curry to minimum 2 tablespoon. Thanks again. Hi which country are you in? In Toronto you can get it in most west indian groceries and Chinese/Vietnamese supermarkets, in NY you can get in on Liberty Av. If you are in the London you can get it at Peckham and at Brixton and in Chinese/Vietnamese places as well....... after all that :P ...... the alternative is coriander leaves, also called cilantro leaves in America/Canada, you have to use twice the amount of these as they are milder than shadow benny. hope this helps. Happy cooking.
To thicken it up you could mix about a spoon of all purpose flower and 3/4 cup of water and add it to the stew, let it cook for approx five more minutes and it will be thicker.

To the haters and simple minded. If it does not work for you don't look at it. Simple!. It takes a lot less energy to be pleasant.
In your Curry Shrimp recipe you said "If you have the Caribbean style green seasoning mix, use a teaspoon instead of the thyme and cilantro. If you can source fresh shado beni, that would be ideal instead of the cilantro" In effect are you saying that if i use the green seasoning mix, i don't have to use shado beni? HELP! I made the green seasoning and marinated my chicken thighs in it. I used the whole thing of green seasoning not just a spoonfull like your recipe says.. do i cook all of this with my chicken?? If I dont hear back before Im done marinating, Im just going to cook some of it. I wonder if Ill have to throw out the rest since the chicken was in it???? Can I freeze it and use it again for another marinate?? Oh Lordy!

I personalized the recipe by adding a tablespoon of curry in the overnight marinade. I found it made a difference. Thanks Chris
