Before I retired there was this pizza place I used to go to for lunch 2 or 3 times a week. The owners cared about their food and were always nice. I miss them. All I can say is that I’ve been watching your videos for while, if I would live anywhere near you, you would see me every weekend, maybe twice! I know the love and care you put in your food. I wish you great success.

Well things happen. I am so happy that you are following this dream Joe. You are a big part of my inspiration to make my own sausage. I will be buying the LEM Stuffer soon. Not sure what my Subscribers will think about my videos on it, I thought about a new channel for the sausage making videos, one per month video. Maybe some day I will make the 10 hour trip to taste your BBQ. Years ago I was going to start a PAPA's Kitchen Food Truck, but I ended up with a Oil & Gas Services Company, less hours and work.

Hey Joe I really enjoyed this video. My...you've come a long way since the beginning on UA-cam! I can tell you from experience, owning a neighborhood restaurant and pub in the 90's, that it can be tough, but so much fun and rewarding. You will learn new and better ways everyday. Loved hearing your real life stories on the opening. Also taking a peek at your processes and tools. I feel this should be an ongoing series for those taking BBQ to the next level. So many places you can go with this. For example, never seen anyone detail just how they’re holding all their various proteins… time, temps, humidity, etc.

Id love to see a video on how you keep the actual meat warm after it comes off the smoker. I’ve always had a hard time with that at home and wondered how bbq food trucks do it. I use the FTC method which works good until you pull it and and get everything cut up and it’s cool by the time you serve.

My wife caught me watching this and was all, “Jesus, you’re not thinking about opening a food truck are you?” Lol. I was all hell no, listen to this guy talk about how hard it is! We met when we were working in a restaurant 25 years ago so we know it’s a struggle. Good luck! I’d stop in for sure if I find my way to El Paso! Ben E Keith was my beer distributor when I was in North Texas years ago. Didn’t know they did other things too.

Joe you rock. One suggestion maybe hire a prep cook. They can do all the cutting of jalapeños, and tomatoes, and onions and stuff. That way it frees you up for other things. Just a friendly suggestion no harm intended. You know better than anybody what you need! Good luck with everything!! If I travel that way I will be sure to come get a meal!!

Joe, be careful and firm with Vevor. Glad you had no issues. They offer a lot of products, and the handrail I bought had issues and Vevor just didn't offer good customer service.

Put a few cards or a poster in the Petro Truck stop. Truckers will look you up online and come visit. I usually laid over there on weekends.

I dreamed at one time in my life of doing a small restaurant but now that I'm a little older I realize that I have to settle for cooking occasionally for family. I'd think of doing a food truck but the same disability that keeps me from business inside would keep me from business outside. Well, that and growning in St. Paul MN means I'd need an air conditioner bigger than the truck itself to stay cool. :D #bringonthesnow
