Mam we can get a carry by doing 6+6, 7+7, 8+8, then why did you choose only 9?

Yes, you are right we can get carry by 5,6,7 and 8 also but as I mentioned in video that take the highest number available which is 9, if 9 was assigned to any other letter then we would have gone for 8. I request you to watch the video once again.
