    For the 8 Quart Instant Pot: 2 lbs beef short ribs, 2 lbs oxtail, 1.5 lbs brisket
    For the 6 Quart Instant Pot: 1.5 lbs beef short ribs, 1.5 lbs oxtail, 1 lb brisket
    3 1/2 Tbsp salt + 1/4 cup distilled white vinegar (for cleaning the meats)
    1 yellow onion
    2 1/2 inch knob ginger
    1/3 lb white radish
    1 oz rock sugar
    2 tsp salt
    12 cups boiling water
    Spices:
    1 cinnamon stick
    3 whole star anise
    1/2 Tbsp coriander seeds
    1/2 tsp fennel seeds
    5 cloves
    1 black cardamom pod
    1/3 lb eye of round or filet mignon (for rare beef)

    Accompaniments:
    4 green onions
    1/2 bunch cilantro, washed & trimmed
    2 jalapeños
    2 limes
    2 cups bean sprouts, washed & trimmed
    1 bunch Thai basil, washed

    fish sauce
    Hoisin sauce
    Sriracha sauce
    ground black pepper

    Dude. I just tried making pho with my instant pot and it took so much work. It was a disaster. I wish I saw this video before I tried. I didn't know about straining the broth through a cheese cloth, which is why the broth tasted like pure fat! My kids always listen to me when I say finish your food, but today was the exception. They looked at me in disbelief on how bad it tasted, lol. Poor kids. My wife took one bite and told me she appreciated my effort. I realized it cost more for me to make it at home for my family than going to a pho restaurant. Maybe I will try again, but I'm sticking to my local Vietnamese restaurants for now. I'm positive the pho you made tastes awesome. Thanks for the video!

      Aw! I am so sorry to hear about your pho disaster. Yes, when making pho in the Instant Pot, the key is choosing the right cuts of meat and bones. Straining is important too. Another trick if you're not in a hurry is to chill the stock and then skim off the congealed fat. I hope you'll give it another go. I am rooting for you to make your family redemption pho.     Why do you add the fish sauce after cooking in the Instapot?
    Why not cook it in the Instapot with the fish sauce included?
    Why is it better to add it after?

    Can I use white sugar if I don't have rock sugar? If so, how much do I use for a 6qt Instant Pot? And what is your preference of fish sauce for the perfect broth in your opinion? Thanks in advance!!

      White sugar is just fine if you don't have rock sugar. Use 1 Tbsp white sugar for 6 quart IP. For the fish sauce, it really is a matter of individual taste. I prefer a medium savoriness so use 1 Tbsp fish sauce per 4 cups stock, total of 1-2 Tbsp for 6 quart recipe. If you're not sure, serve the fish sauce on the side. Good Luck!

    i am curious about why you burn the outside of onion and ginger before cooking?

      The charring of the onion and ginger imparts smoky flavor into the soup stock giving it layered flavor and depth. :)

    Where can I buy beef tendon? I've looked for it at my local butcher, specialty super market as well as several Asian supermarkets but of to no avail. Please help 🙏🙏🙏

      99 Ranch Markets are a chain of Asian grocery stores. There doesn't appear to be a store in North Carolina. If your local market doesn't sell tendon, ask the restaurants where they purchase or try to buy from them. Good Luck!
