Looks great. I’ve recently started purchased a block board similar to yours. I also have a slicing knife similar to yours. They told me not to use serrated knife on the board. Have you found that the knife is deep scaring the board?

I’ve done turkey breast a few times (following your process) on my Cactus Jack and they always end up dryer than I’d hoped, even with a wet brine. Smoker and meat temps were all as expected, pulled at 145/150 etc… I feel like Ive done everything right, yet they’re never juicy. Any ideas where I’m going wrong?

Love this idea and do something similar, just much simpler. Pork ribs, tips, chicken wings, sausage, corn bread and pasta salad. Love a variety.
