Recipe: Best tasting chili I ever made! Steve Hall
2 lbs. ground chuck (browned / drained and set aside)
In a dutch oven brown 7 strips of bacon (cut into little pieces)
and leave the bacon and the grease in the pot and add 1/2 cup
of diced onions, 1/2 cup diced bell peppers, and 1/2 cup diced
celery.
Simmer on medium heat for 5 minutes to soften the veggies.
Prepare a can of diced tomatoes by blending it in a blender
take another can of diced tomatoes and drain and also chop
up 5 or 6 Roma tomatoes. Put 1/2 od the Roma tomatoes in with the veggies, add 1 whole Jalapeno pepper (remove seeds and each end of the pepper)
Add your beef back in and add the can of blended tomatoes and
1/2 of the diced tomatoes. Add more of the Roma tomates saving a few for the end.
Now add 1/2 cup beef broth, 1 tbsp. minced garlic, 1/2 tbsp. brown sugar, 2 tbsp. chili powder, 1 tbsp. paprika, 1/2 tsp. cumin, 1 tsp. red pepper flakes, and 1/4 cup of strong brewed coffee!
Simmer for 30 to 45 minutes ... add 1 tsp. salt. (no black pepper)
Now add all the rest of the diced and fresh tomatoes.
Simmer one minute and serve!
Put a corn tortilla in the bottom of the bowl, add your chili and
corn chips around the edge. Top with shredded chedder and
shredded pepper jack cheese and put a dollop of sour cream
on top and a sprinkle of chives!
Enjoy!!!

Chili isn't chili without beans. The "Red" we use for our hot dog chili.
There is as many ways to make chilli as there is people on the planet. So no worries mate
I love chili but tbh the only authentic homemade food I ever ate was my stepdad’s venison chili, which was very hearty and tender. Other than that I’ve only had canned chili but love it. Had no idea until recently that “real chili” is considered to have no beans in it. I like both, as long as the taste is bomb but I prefer beans in mine as they help the digestion process lol, and doesn’t stay in you more than it’s welcome haha 😂
I love Steve. His commentary is funny and he makes cooking fun and easy. So sad he passed. He’s a legend in my book!

Raw onion goes with alot of things! It just makes the recipe over the top! :)
I do that a lot, with chiliis, or beans...sometimes some dinely diced jalapeños, as well...

9:58 Coffee tweak , I always eat chili with kidney beans gotta try this.
EVERY time I make chili I use fritos. SO cool to see that he enjoyed his like that as well. Fritos scoops are a great way to avoid needing a spoon, but you sure can't beat the Jalapeno ranch or chili cheese flavored fritos!!! I like the idea of using different blends for the tomatos, I will try that this week! Thanks for the recipe ya'all.

When I make chili, I have to make two batches -- one for me and one for my wife. She cannot eat anything with tomatoes in it. This recipe wouldn't work for her at all, but it sure does for me. By the way, if you want those jalapeno peppers to have some heat it them, do NOT discard the seeds. The seeds are where the hot is. AND, you're right -- do NOT, not ever, not even once -- rub your eyes. You MUST wash your hands several times. But, experience is a great teacher -- if you don't believe me, you won't do it but once.

Thanks for this video, I like the idea of playing with different tomato consistencies and cooking times so there is more variation in the final product. Also, good idea to use actually brewed coffee better than other recipes that say to add the ground beans or whatever since this way there's no way it could turn out gritty. The perfect way to use up the tail end of the pot around when it's time to switch from coffee to beer.

I'm from Texas also! There is the traditional "Texas Red" (sometimes cooked with cubed/strips of beef)! But in Texas we also have what we call "Chili Beans", that's when we use beans in our chili!! We also have chili meat that we use in chili, that you can find in any grocery stores in Texas It's a coarser grind of ground beef! Most people assume we use beans in our chili, but that's not true, these are two different dishes!! FYI from the Lone Star State!! 🤔🤨🧐😉✌❤ P.S. we also have "Frito Pie", which they used to serve us in school back in the 60's & 70's!! LOL

Made this tonight , I made 1/2 of it using 1 pound of buffalo and only 1 jalapeno, and adjusted ingredients accordingly. It turned out great, and wasnt too hot. Adding some canned mushrooms would be good in it also. Weird I know . Thanks to the chef , may your memory live on thanks to UA-cam.

I make my chili very similar. Only thing I add that's different is a chocolate bar. Now I'm hungry and I'm going to have to go make some thanks Steve wherever you are I know you're a special angel
One of the things I've noticed, is when you google for a chili recipe people generally put only a few TBSP of seasoning for 2 lbs of meat. You used about 4 1/2 total TBSP of seasoning. When I look at winning chili recipes (like from ICS, for example) they always use 2-3 times more seasoning, with lots of different kinds of chili powder which adds great layers of flavor. It really does make a difference. Looks good though. Love a good bowl of chili, NO BEANS!
Never heard of putting a corn tortilla in a bowl. As for chips, had 'Frito-Pie' on a weekly bases growing up so starting with Fritos on the bottom, chili on top then Cheese and onions.

I'm what we call a displaced Texan, having gotten out of the military in Maryland :( NO ONE up here has ever heard of Frito Pie!! I love that stuff, and remember fondly looking forward to it at little league ball games! They do something called walking tacos in red solo cup, which has tortilla chips in the bottom. It's not the same at all

This is now my 'Go-to' way to cook chilli. It always turns out beautifully and is the best tasting chilli I've cooked. I have to swap jalapeño for other chilli peppers i xan easily buy here & not been brave enough to try the coffee, though. We only have instant 😄. Greetings from a

I watch so many cooking shows and many times they must step away to look for something like a forgotten ingredient and we are left watching the paused set. I’m Texan. My wife is from Florida but with deep Cajun roots we use the trinity all the time in her Cajun cooking but it doesn’t go in chili.

I have never heard of coffee in chili. But worth a try. Not sure I am tough enough to put those hot spices and jalapeños in, so will wimp out on those haha. I will try this though.

If you will put your corn tortillas in a skillet with just a little oil for about 20-30 seconds on each side (just when they start to puff up a little) yu will find they taste better and are much easier to cut up as you are eating the chili

Use beans minus the meat. Use pinto kidney and black. Add corn and mushrooms too.

Looks very good! To add some acidity and flavor with the brown sugar you could/must pour some red wine into that. :)

The role of the sugar is to cut through some of the acidity, as chili is already very acidic, so that would defeat the purpose
I bet it tastes better after its set over night.
Shotgun, you gotta try Chilito's! Put the fritos on the bottom chili on top and add taco toppings to the top of the chili! To die for! Let me know if you try it.

I want to try making dutch oven chili but I do not own a dutch oven yet.
1- What size would you recommend for me to buy so I can use it for a lot
of different recipes beyond the chili since I will probably only buy one for now?
2- What size in quarts is the one you made that chili in?
3- should I try to get the one with the handle over the one without it in your opinion?

This one is a 6 qt. The handle depends how you like to transfer it from one place to the other. We use the red one that has a handle on both sides. If you cook for a large crowd or cook a lot then get the bigger one. Glad you love this channel. Lodge Dutch Oven amzn.to/2GJKUOD
