Youghurt and Dahi are types of Curd Dahi is traditionally made indian curd it's made by using natural starters like "Chilly sticks or Dahi ka jamun" basically naturally sourced Lactobacillus ( it can also be made by previously made batches of dahi) Youghurt is more commercial with added ingredients like "extra probiotics" It is made using artificial yoghurt starters Yoghurt has a milder and sweeter taste while dahi is straight up fermented milk , it's sour and great for making curries. You can interchange them in Indian recipes.
I think it's because a lot of cooking channels try to show every aspect of cooking as a perfect step, and he doesn't. I could be wrong, but that's how my brain rationalize why his channel is comforting for me to watch
I'm sure someone has already recommended this before, but if you rip off a piece of naan/roti and fold two ends, making it a sort of nacho chip to dip into the gravy, its a lot better for controlling your bite size and how much you wanna put on it. Like a nacho, it lets you dip and scoop instead of needing to pour it on
Quick tip 15:16 , you can put your air fried chicken in a bowl and a small container in between for placing hot charcoal on it. Then just add ghee/or melted butter over it and cover the bowl with a lid. This is gonna give smoky tandoori flavour to the chicken.
I don't know if you actually replaced the tomatoes or actually trimmed off the mold from them but if you trimmed it off please don't ever do that again as the mold you see on the surface is just the spores, the mold has a bunch of very thin roots that are sprouted all inside of the food product that has it grown off from and cutting it off doesn't entirely get rid of it. Even if you cook it off the mold produces mycotoxins that are still very much present and can give you all sorts of adverse reactions Love you futurecanoe, your content has always been amazing, please dont get yourself sick

Swathi is a champ with her recipes ! Also, to boost your taste cook the tomatoes a bit before blending them. Cook the tomatoes until you can take off the peel and throw in some cloves while you cook it. Also, temper your butter chicken with some red chilli powder and fenugreek leaves and finely minced garlic in heated Ghee/Butter!!! Also, used boned chicken and throw in the juices if you are cooking it in an oven, it adds that depth to the gravy and just half a teaspoon of ketchup in there for the right amount of sweetness/tanginess

Amaranth is a grain, a very ancient and healthy one, not at all comparable to regular grains. It is good when you have digestive issues, very tasty when roasted lightly and just a very good breakfast option, regardless of digestive issues (which I don't have) or not. It has a neutral nutty taste and doesn't become soggy in liquids. It can be used in granola, as a topping or as is, instead of chia seeds (which are overrated anyways) or rice or bulgur or...you get it.
in the same family is a common "weed" - lamb's quarters. i use the baby leaves - cooked or in salads - and they do have a slight nutty taste. i do have digestives issues and tolerate this well. i've heard the seeds can be used like the o.p describes amaranth seeds but never did myself.

Grew up in india (Hyderabad), now live in the US, got into cooking during covid in a big way and been refining my butter chicken recipe for nearly 6 years now (learned butter chicken before covid cuz it was one of my fav dishes growing up) Ive gotta say, thank you for trying to follow the recipe as well as you can (nbd on the tomato replacement). Air fryer is great idea - i did it for the first time last year and its the closest thing to a tandoor besides one of those pizza ovens. Butter chicken is basically a red sauce with a bunch of a lot of spices, yogurt, and ideally cream and butter... Just thrown is whatever chicken you want. Super delicious stuff and pretty easy to cook tbh.

Frying the onions down is a huge part of making the sauce/gravy. You can’t rush it because you don’t want to burn them, but hot enough to get a deep brown color on them. Try to find curry leaves next time, and adding some diced, microwave par-boiled potatoes goes a long way too. Also, it’s amazing the next day after the flavours have combined in the fridge.

Frying the onions down is a huge part of making the sauce/gravy. You can’t rush it because you don’t want to burn them, but hot enough to get a deep brown color on them.
Try to find curry leaves next time, and adding some diced, microwave par-boiled potatoes goes a long way too.
