Both works, since it's about how water particles diffuse out of the stomata. And since water vapour moving away from the water source is evaporation, we tend to use this word to make it specifically about water *vapour*.

it forms H bonds with the carbohydrates in the walls of the xylem vessels - process is termed adhesion.
