Teriyaki chicken is a really popular Japanese main dish, and everyone loves it; there are a lot of recipes on the internet, but I want to show you the easiest and the best Teriyaki chicken.

1 tbs grated ginger
1 tbs potato starch or corn starch

The only mirin that is easy to get in the USA is aji-mirin from Kikkoman. Is that fine to use, or is it better to use a substitute, such as sake and sugar?
This is is my favorite kind of recipe by the way! Just a few ingredients, simple but so delicious =)
I cook Japanese cuisine on a daily basis and been to Japan a couple of times, so here's a bulletproof advice from someone who loves cooking but also struggles to find good mirin in his country: mix some honey with dry white wine - there's your perfect mirin substitute :)

Aji-mirin is a perfectly fine substitute. It's not brewed traditionally, so it doesn't have quite the complex flavors that hon-mirin has, but it can be used in any recipe that calls for mirin, and for most you're unlikely to taste the difference. Even in Japan aji-mirin is a very popular substitute for cooking.
Many of Japanese people use Aji Mirin instead of Hon (Real) Mirin. No big difference! You can substitute it with Sake and sugar as you said, but, I recommend using Aji Mirin. Thanks for watching!
