Enjoy this silky and smooth buttercream that tasted delicious and is not too sweet.
150g Egg Whites
150g Sugar
500g Unsalted Butter
DONT FORGET. To let the egg and sugar mixture cool before adding room temp butter!
Maam can I ask if after I remove the bowl from the pan will I let it cool before beating or beating them and let them cool?
You’ve to whisk it immediately, if after whisking, the meringue still hot you can add the butter a bit cool, this help u to regulate the temperature or simply let the egg and sugar mixture cool a little, after whisking and then add the room temperature butter

I've been looking for a recipe usijg hand mixer so long cuz I don't hav those profession expensive stuff
You do know that for almost every recipe with a stand mixer you can just use the normal mixer.
U can use the hand mixer for every thing actually
Use the spatula to get the air bubbles out of the frosting. If not then the piping bag of frosting shoot out air bubbles when your squeezing the bag.

The recipe is good, but I had to watch the video several times to get it. Try a different colour font on a white background, white on white can be difficult to read!

I've been only using this recipe for my smbc. For some reason powdered sugar doesn't work for me at all, no matter what I do its always grainy. So this recipe is the best ❤ my only question is, would it work under fondant? I know smbc should work under fondant but since this is with no powdered sugar, would it still work?

I heat to 71c then cool it to room temp. Butter should also be room temp or the casein will have trouble emulsifying the mixture

no. the melted marshmallow texture is raw meringue without the butter, just the whipped egg whites with sugar. this is a type of buttercream.

This is one of the better recipes. The tip for melting some of the frosting and adding it back in definitely keeps it smoother when all you have is the whisk attachment. Those us of with hand mixers don’t have paddle attachments, so we tend to aerate more than we should while mixing.
I think most recipes call for too much butter. Add it in chunks. I usually achieve the best consistency when I still have 2-3 chunks unused. When I added exactly what the recipe called for, I ended up with something indistinguishable from American buttercream, which felt like a huge waste of time and eggs.
Is it still safe to eat cuz of the fact raw egg whites were involved??

You don’t add water to the buttercream. In a pot/pan put water in it and wait until it’s simmering then put your egg whites in a different bowl and then put your sugar in that same both after. Place the bowl on top of the pan/pot that has the simmering water then whisk and continue following the steps in the video

You can't makes cakes with it, but you can frost it depending on the size of your cakes.

About half a cup
One egg is approx. 65 grs. Let's suppose 35 grs. is the yolk and 30 the white, so it would be approx. 5 egg whites. You can still weigh it before you scramble/whip it and add the sugar.
