    Join us for week four of the pantry challenge as we navigate through the aftermath of a Deep Freeze. We've been trapped inside for a week but managed to come up with some delicious meals using ingredients from our pantry and freezer. Watch as we transform frozen chicken thighs into crispy, mouthwatering goodness. Don't forget to subscribe for more pantry cooking inspiration!

    Carter's Copycat Keto Nuggets:
    1.5 cups shredded unsweetened coconut
    1 cup pumpkin seeds
    1 cup sunflower seeds
    1/4 cup hemp hearts
    1/4 tsp salt
    monk fruit/stevia to taste
    5 oz bag Lily's dark chocolate chips
    6 squares Baker's 100% Dark Chocolate
    2 tsp coconut oil
    In large bowl, mix first 6 ingredients, and set aside. In double boiler, melt chocolate chips, chocolate squares and coconut oil until smooth. Pour chocolate mixture into dry ingredients and mix thoroughly. Spoon dollops onto cookie sheet lined with parchment paper. Put in freezer for a couple hours. Once set, they may be stored in either the fridge or freezer.

    I just opened a can of chicken and made a chicken salad to have as a dip for snacking this weekend and thought, “something is missing here” to make this more exciting and less like chicken salad. Watched your video and immediately added buffalo sauce and voila! Perfect. Thanks for that! I’m going to keep with the challenge a little longer because my supplies are not running low at this point and we’re doing ok with not going to the store, although I do miss fresh fruit over eating canned. We will survive :-). Thanks Carter. Can’t wait for the kitchen make-over reveal eventually. It will be worth it!

      Nice job, Kari! I'm definitely doing February, but I will do a trip to the store for a couple items next week. Lettuce, shallots, goat cheese, eggs and an order of the Hero bread. I think that's it. Don't fret over adding some fresh items.

    Hi Carter,
    We had the same weather. Is was not that the snow was overwhelming, the ice was the danger and we could not get out the driveway. The wind and cold was the worst I can remember since living in Alabama. Our Azure driver and truck were stuck in Florence for a week. But, we finally were able to pick up our order and everything was perfect.
    We didn't have the kind of work y'all are having done but it was interesting as the kitchen was coming together. We didn't have to have things taken out, as we pretty much had a blank canvas. Kept the tiny little 10' L shaped cabinets and counter. New floors and added to the room which is 300 sq. ft' I designed everything and the cabinet man we had was an absolute artist. My dream came true at almost 75 years of age!. It's never too late!!
    Also, my health has been very stressful. It's my lymph system.
    BUT, I'm so blessed, my husband is awesome.
    I been able to can roast beef, corn, peas salmon and 12 gallon bags of tomatoes. Gotta fill that pantry! LOL :) I just have to rest for several days in between each canning day. It's all good I go for therapy and have compression boots for at home therapy. and I'm believing for complete healing. HalleluYAH!!

    P.S. maybe you could show us how to start microgreens. That might be easier for me than trying to maintain a salad bar right now.

      I am sorry to hear of the continued health issues. David has friend here who has also struggled with lymphatic system issues that seemed to take forever to diagnose. He is finally starting to regain his strength now, and I hope the same for you very soon. You have still managed to get so much done, even through the health issues. That is quite the testament to your strength and fortitude. No doubt you will achieve complete healing!

    We had horrible ice and central Texans were stuck for several days. We rarely ever get snow here so we get excited when it does happen. I hope your remodel stays going as planned. When we did our several years ago I was without a stove or microwave for weeks. I learned I could A whole dinner in an electric skillet and a toaster over. I was beyond over it when it was finally over. My girls were little then and were sad. They said it was like camping.

      You may have been stuck, Cindy, but I bet you were well stocked for it! We always used the electric skillet and the electric griddle when I was growing up. I haven't had either in years, but I've been thinking about adding one or both to my kitchen. It sounds like you really made it fun for your girls!

    We had the same issues with the weather here in North Mississippi, except not as much snow, but because of the ice, we were stranded for a week as well! I was born in DuBois, PA, where they had "Nick's hot dogs." They were topped with Nick's hot dog sauce, mustard, and finely diced onion. Sounds very similar to The Varsity. When we would visit, I can't tell you how many of these special hots that we ate! I have several versions of the hot dog sauce, handed down from my family members.

    All looks delish! We can’t keep kale chips on the shelf and those looked so amazing. Whippoorwhill Hollar has a canned chili dog sauce that you may enjoy.

    Those clusters look better than the ones you buy at the store. You should put keto somewhere in the title or a hashtag. So many people are looking for keto recipes. I think it would get you more views.

I toy with the idea of using "keto" in titles and descriptions, but I'm really not sure whether I can keep those viewers happy when they see that the majority of the content is on growing on preserving food.     Beautiful selection of meals from the pantry. Yes we were hit pretty hard here in SW Louisiana for the freeze...just not as many days. We were 24 hours with no electricity & no water but with the pantry, we were fine.
    I used my home can chicken to make chicken salad, so good & so handy.

      Perfect, Pam! 24 hours without electricity and running water, and it was merely a tiny blip for you. I hope that others who were not prepared have committed to being prepared for the next time.

      @@growandpreserve yes some people think being prepared is for end of times but no it's for everyday regular situations. I live in coast in hurricane zone so I definitely stay prepared.
      I know you definitely do too.

      Agreed. We lived on the coast for awhile as well. Always had go bags and fresh water and open and eat food ready. Now it's tornadoes and Winter weather that are regular threats here. I've been toying with doing a video on this in the Spring. Would love your input! @@redgingerbreadpam

    Chicken looks tasty and can't go wrong with Kale salad. Keto Nuggets looks really good. I know what you mean about ice and snow. We had the same for three days. Burr. I do hope your workers can make up some time. Don't want it to drag into garden season.
    I'm working out of my freezer also. Flounder and pan sauteed mushrooms with steamed cauliflower, broccoli and cabbage today. Also have several of the Costco salads. Made lots of soups during the snow. Thanks for all the ideas. Stay safe and warm.

      What a super healthy meal you had today, Donna! Good for you working through the freezer. To me, it's the great procrastination-enabler! Do you have a favorite Costco salad? We love the sweet kale salad, but I haven't tried any of the others.

    I want to try that candy yummm I think I have most of the ingredients in the freezer Yes the snow was bad enough, but the ice and cold was terrible! At least we had power. The city had broken water pipes and yesterday we finally had the boil water lifted. My lemon tree, basil and comfrey are looking sad in the greenhouse, I did have a heater but I guess it wasn't high enough to ward off 5 degree temps. I am still cleaning out pantry and refrigerator, found nine russets that were starting to sprout. I made a large pot of potato soup, then divided it into two batches. The first was turned into clam chowder and the second into loaded potato soup. Ended up with five bowls of each in the freezer . The last of the milk was blended into an orange tapioca pudding, and the sourcream ended up as onion dip for the last bit of potato chips! Today I cleaned up all the odds and ends of freeze dried veggies and made 12 ramen soup in a jar. I just need to add coconut amino and boiling water. Still love that freeze dryer lol! Four more days until the end of the Jan challenge, but I haven't purchased groceries since Dec 3. 230$
    For Feb I will continue to use up what I have put in the freezer and the cans and jars I found while cleaning. I will purchase milk sourcream chips, onions celery carrots mandarins and lemons. I think that will do me until Mar 1. I have tomatoes in my aero garden and micro greens growing as well. Thank you again for your inspiring ideas.

      I agree about the ice and cold! Give me pretty snow anytime, but you can keep the rest! So glad you're finally off the boil water alert. Hopefully the items in your greenhouse will come back, if we ever get some sun. We seem to have gone from the deep freeze right into the gloomy rainy season.
      So creative on using those potatoes! I ordered my seed potatoes this year, then forgot I had ordered them and ordered another full batch! I'll be looking for new ideas for using potatoes this Summer! Your ramen soup jars also sound fantastic. That could be a terrific thing for David!
      I have done roasted chicken, pulled pork, canadian bacon, sweet peppers and cat treats in the fd so far. It's defrosting now, but I hope to get another load in tonight. I spent the morning trying to figure out how to best keep it organized. Not sure I'm there yet, but it's better!
      Great job extending the time between grocery shops! I will shop at the end of this month for eggs, goat cheese, keto bread, shallots, and probably some type of salad to keep David happy. My garden lettuce has decided not to even try to recover after the freeze. I am determined to make enough room in the freezer to pre-freeze items for the freeze dryer!

    Rule #1 for construction: Double the estimated completion time, and add at least 1/3 the estimated cost. Just say'n from experience. 🤔

    Mrs. Carter, I love watching your videos, they're very down to earth. You can like the way I like to can. I have watched two or three of your soup canning videos. I was just wondering how would you do ham and potato soup. Maybe you can use that in a video where you do three other types of soups.

    Copy Cat recipes are THE BEST. I ordered our yearly salmon from Alaska, and she added 2 pound's of tiger prawns for 20 bucks. It was a last minute, special. Anyway, I made O-GRD Shrimp Alfredo. Cost me about 20 bucks for 4 people. It's 20 bucks EACH to go eat out. Home is better. Your Choc treats made me want to run to the kitchen and make some no bake oatmeal cookies. 🤣

    If you need added weight when you put a pot on the chicken, put a large can or two in it.

    Love the different meal ideas. I want to try the bacon & egg salad. Yum! Question about the bacon you canned, I canned 5 quarts of bacon. I've only tried 1. It was stringy and very little taste. I tried crisping it up in a skillet. Not sure what I did wrong.

      Interesting, Kathleen. I'm not sure what went wrong. Did you do it the same way I do mine in this video: ua-cam.com/video/Tbabntj4PTc/v-deo.html. I find that it crisps up perfectly with3 minutes in the air fryer.

    Thanks for sharing your version of the Keto snacks - you have a similar cooking style to our kitchen so it’s always interesting to pick up new ideas. How do you find Allulose reacts during baking? I thought I would try an allulose muffin & was interested in any insight you have? thanks again & I am sure your kitchen will be fabulous

      Hey, Carole. Great to have you here. Allulose does fine in oven temps, but do note that it generally causes baked goods to brown faster and perhaps more than you're normally expecting. This is one of the reasons it's become so popular in keto baked goods that don't normally brown very much. If I'm baking with allulose (and it's definitely still my favorite for baking), I always have a piece of aluminum foil hand to top anything that's browning more quickly than I'd like. Hope that helps!

      I used the bagged "Sweet Kale Salad" from Costco and just subbed my own sugar-free dried cranberries and raw pumpkin seeds, then added drizzled olive oil and balsamic vinegar over it. Super simple!

      It's the way of eating that makes me feel best. For me, it raises my energy level, helps control my weight, reduces inflammation and water retention, keeps my mind sharper, improves sleep, clears skin issues and hopefully helps protects against some family health history.
