Oookay I have a few comments as well about this segment.
Firstly about the 1 extra tax for non-muslims, basically muslims are recruited as soldiers so they did not pay an extra tax and because non-muslims are not expected to fight aginst non-muslims they paid an extra tax. That about it.
04:54 ... No, Ottoman court did NOT infact spoke Persian. They spoke Turkish but with high influence of Arabic, Persian and later on French. They used a customised version of persian alphabet, even I can read it just with a few weeks of practice and because it IS TURKISH I can understand it to some degree.
Fun fact in west people call Peter the Great... yeah "Great" but in Turkey we call him "Deli Pedro" meaninf Peter the "Insane"

The point of the jizya was not the tax itself, but the show of subjugation of the one who's paying it.
