Even doing a simple Google search results in a myriad of explanations and justifications. In unit 5, we touch on this lightly but try not to have the kids get stuck on that as there are various explanations as to why we would use open, and why we would use closed. Fortunately, the questions that CollegeBoard presents to them will explicitly define if it is on an open or closed interval.

Wouldn't the interval be [1+, ~4.8-] because technically at 0, the particle is at rest. Someone please help... (Question 6 and 7)

In the problem on the first slide, wouldn't the graph for velocity start at 0, since the ball that Mr. Brust will throw has not moved at time = 0?
We should clarify this problem for t>0. That way at t=0 we would have open circles for velocity and acceleration.
