It's one of those dishes where the preparation (i.e., cleaning) is more challenging and trime-consuming than the cooking itself. My alternative to lemon grass (if not available) is a bit of ginger to lessen the fishy factor and for some extra flavor.
I really like how Erwan was able to showcase the aesthetic side of adobong pusit despite its color. I mean some people I know don't actually like eating this dish because of its color but Erwan has given a different angle to view its beauty. The whole video made everyone drool for sure. I'll surely recommend this video to my colleagues, maybe I can convince them to try this one and hopefully they'll like it. Another great video FEATR 👏
What I like about this dish is that the squid ink adds a whole other dimension with the traditional recipe and taste of adobo, the sweet and savory flavor of the sauce plus the distinct flavor of the squid along with the ink topped with steaming rice makes your mouth water. While the recipe of adobo varies depending on what region of the country you grew up in it still carries the distinct flavors which makes it truly Filipino, sweet savory and spicy for some, love the video Team FEATR awesome work!

I never liked this when I was a kid. But when I had a taste of this dish that was cooked right and what a perfect punch of spice, I fell in love. Squid adobo > squid game. Lol
We dont usually clean the inside when we cook squid, specially that small. It’s everyone for themselves when it comes to getting rid of the cartilage. There are heaps of those plastic looking thingy on plates and table. Lol There are times when squids are full of those weird white stuff inside them. They say its eggs. I hate those but older people love them. We’d even cook down the left over adobong pusit until the sauce has almost dried up then add a little oil. If you let it go even further than that it becomes so good. The tentacles are slightly crispy.
