Sounds like a good trade except the rook is in the corner and the knight is in the king's face. The key take away for me in this excellent video is that the value of the piece depends on the dynamic position. In some positions, a pawn is worth more than a queen.
I really only saw Ne2+ forcing the queen to sacrifice itself because I thought that based on the way you were asking, there was no way the solution was as easy as playing the fork and grabbing the rook. I would have 100% grabbed the rook in a real game

In the first position, if the bishop moves, the follow-up is Rg2 followed by Qxh2, right? I was also thinking Bg2+ Kg1 and Bxf3+ discovered check winning the queen

I loved your thoughts on this. Indeed, the value of the pieces are in constant flux. Context is everything in chess, as in life.
