    🌼 Korean Hot Pot (Deungchon Kalguksu)
    Ingredients
    For the Broth
    8 cups water
    5x5” dasima (kumbu), dried kelp
    2 oz dried anchovies
    For the Sauce
    1 tbsp soy sauce
    1 tbsp fish sauce
    1 tbsp mirin
    2 tsp doenjang, Korean fermented bean paste amzn.to/2RM1JLb
    2 tsp Gochujang, Korean red pepper paste amzn.to/2VNSpHZ
    1 tbsp fine gochugaru or regular gochugaru amzn.to/3aOk953
    2 tbsp chopped garlic
    1 tsp dasida, Korean beef bouillon, optional amzn.to/3aTS7b6
    For Dipping Sauce
    4 tbsp Korean seasoned soy sauce or regular soy sauce mixed with 3 tbsp sugar seonkyounglong...
    3 tbsp rice vinegar (any vinegar you have will work for this recipe)
    Asian mustard or wasabi optional
    For the Veggies, Beef & Noodles
    1 to 2 lb your favorite mixture of mushrooms, I used oyster, beech and enoki. Remove bottom of mushrooms and separate individually
    1 onion, sliced
    8 oz Yukon gold potatoes, peeled and sliced into 1/4” half moon shape
    6 green onions, cut into 2” long
    2 serrano, sliced, optional
    6 oz Minari, Korean watercress or regular watercress, cut into 3” long
    6 oz any green veggies you’d like to have for shabu shabu such as Napa cabbage, bok choy, crown daisy, kale, spinach and etc
    1 lb of your favorite cut of shabu shabu beef (I used top blade, sir loin & ribeye). You can also use shabu shabu chicken, lamb, pork or bean curd
    1 to 2 portions of kalguksu, Korean fresh cut noodles (you can substitute with any wheat noodles or ramen noodles)
    For Fried Rice (Assemble all ingredients in a bowl)
    2 cups cold rice (cooked)
    1/3 cup chopped carrot
    1/3 cup chopped Korean watercress or regular watercress
    1 egg
    1 tbsp sesame oil
    1 tsp sesame seeds
    Pinch of salt & pepper

    My friends and I went beach camping this past weekend and I made this for dinner for them and it was DELICIOUS!!! It was soo damn good that our camping neighbors came over to eat some too! It was such perfect beach sunset dinner.

    So little storytime on my life as only 1/4 korean growing up in an houshold wich basically is a normal european houshold with asians living in it 😂:
    Growing up we ( my sisters and I) would get each 20 euros a month to buy something in the asian grocery store, wich is around a hour away from us… we would always have to research recepies bc our mom was adopted from a German couple and never really learned much about our own history and stuff… When I was around 16 and my sisters 12, we would see that pot in the middle of the store for 50 % off. It was the perfect pot for hot pot, (wich we never had before) so my sisters bought the pot and I bought some mushrooms, pork and bak choi or cabbage, I don’t remember what exactly, and some silk tofu… You have no idea how proud we were when our mom came back that evening and we would have that hot pot filled with veggies and meat :)
    That day I had the best hot pot I’ve ever had and this video somehow reminded me of it (haha why am I actually getting emotional 😂)

    I like to have a lightly beaten raw egg on the side to use as a dipping sauce for this style of meal.
    As a family meal I think this is the "business". Everyone getting together sharing the day's happenings and unwinding can't be faulted.

    Ooh I love Shabu shabu but haven’t made it in a while. I make my broth with konbu and dried shiitake, since I’m vegan. I usually make a Japanese style, but all your Korean flavors are really resonating with me. Yum. I am usually so full after eating noodles and would have room for fried rice!

    H mart for me is a 1/2 day trip, thus I do not go very often, there are a Vietnamize and a Chinese store both on the way and way closer to my house. There are some items that H mart carries that the others do not thou.

    Hot pot is much more classic and popular in other regions in China, but you just didn’t want to mention it at all, that’s so funny😅 and watercress is not Korean watercress, as a Cantonese I ate it since I was a baby.
