    A big reason for using so much water is to prevent food poisoning. Think about it.
    If they didn't keep a constant flow of water going, all sorts of pathogenic bacteria and viruses would quickly accumulate on the cooking surface and multiply.
    At home people don't have to worry about it, because they cook a couple of servings and they're done.
    If they didn't use the flowing water, every few times they made a dish they'd have to thoroughly clean everything, before they could go on.
    That's because the food is fresh, often alive just before cooking.

    every single comment on wasting water. keep in mind this is japan and they have advanced recycling technology. even they reuse same water in bath tub for the entire family, and they have thing that reuse water from the sink to flush the toilet 😁 please google

    Thank You for telling where you got it and what the name of the dish is. A lot of Street Food Videos don't even tell you what the name of the food they are showing is called most of the time and Never tell where or what part of the city they are in where they found it.

      This is Osaka Japan though where cost of living is one of the highest in the world being in one of the largest and most modernized cities with deep rooted history in the world. The difference between Indonesian and Japanese prices is worlds apart.

      Eraser On one hand, yes, they just cooked fresh (expensive) large scallop...but on the other hand, imagine if you were working on whatever your trade is and have someone just shit all over your livelihood because you just did labor for construction on something they could've done themselves given enough time, or you just served a table walking back and forth bringing food and drinks, etc, or you typed work as a secretary that your boss could've done himself given enough time.... We pay for time, my friend, because if we had a million years to live then we could learn to do it all ourselves, too, and do it for ourselves. This is coming from me, a capitalist and business owner...I pay employees a decent wage for their time because I can't do it all myself even though I know how.

      Yeah, it's on the decline but that doesn't mean their current population is low though. It's not low by any standard, especially when you take into account what little land they have. The future's population of Japan might be low (in terms of land-to-people ratio) but it will take at least half a century for that to happen since the average Japanese life expectancy is 85 now.

      That is a garden hose hooked from the sink to a spigot on the wall providing the sink with running water. the entire kitchen is mobile and can be moved from place to place.

      Dude, water makes cycles in nature. You can't waste a water unless you pollute it. These guys are not polluting a water, it will return to a river/ocean and evaporate, just like if it would do without humans using this water. Contaiminating a water with deadly chemicals is a waste of water and you don't even need to use water to do this - just throw garbage to the river.

    I like the half shell frying pan part, but I won't be making these anytime soon. They looked overcooked. And an overcooked scallop is a tough rubbery scallop. I notice the video of the man that was eating one of these was cut short. From what I've seen he was really chewing away. Scallops when cooked right practically melt in the mouth.

    OMG!!! I feel bad for the people in Japan, a thousand YEN for a piece of scallop, you're are getting duped there everyday. A kilo yes, 1000grams of fresh live scallops in the phillippines is about Php400 or Y800 only and that's in Manila, it can be way cheaper in the provinces. It's not a huge size like your scallop but its of decent size and taste much sweeter than the big ones. You can have in cook for an additional Php250 or Y500. A KILO.
    P.S. Japan is an AWESOME country though and would be perfect if not for everything so expensive.

    I met the man in charge of grilling the scallops whilst on my vacation in Osaka and he was such in a bad mood I decided to skip his store.....
    Too much tourist traffic, I guess and he got sick of it. Great first impression, Sir. 👍

    All these comments about washing away flavors and wasting water lol I’m surprised no one complained about not wearing gloves lol. These people probably sue the hell out of them if they get sick eating them. It’s this kind of notion that makes me sick, Japan has abandoned water though they have drought time to time depending on weather, it may look like wasting water for those hurting for water but doesn’t mean they have to follow their example. They have water! Yet they do conserve more than you can imagine.

    Really not bothered about the overuse of the water but more concerned that the flavour is lost from over-washing. That and the roe is dumped?! They look amazing don't get me wrong but I love me some scallop roe.

    Other than pepper what are the spices they put on before they cook the scallop? I hope it isn't MSG. And the spray is lemon juice maybe? And at the end of the cooking is that soy sauce added? I'd like to know.

    Charcoal use for cooking is very common among many street food vendors, the temperature is near perfect if done right vs many other heating medium. One of the reason why street bbq tastes so unique is the "source" of the charcoal.
