Rick: have always loved watching you share your enthusiasm and love for the cuisine of Mexico. So glad that the One Plate At A Time episodes are getting added bit by bit. Hope that Deann & Lanie are doing well. Always enjoyed when they appeared on the show.
Mexico One Plate at a Time was such an eye opener to me. Back in those days all I ever had was Old El Paso tacos at home and Chi-Chi's dining out. Now I cook real Mexican regional dishes. LOL
I admire a great chef who will admit to small mistakes or omissions. It is a sign of confidence and a wonderful quality for everyone. Bravo Rick. Oh indeed, those are not sandwich's in the regular sense. I could not choose between the two. I love a warm sandwich but a cold one is very portable and convenient.

We were talking about the differences between our cultures (I was 13, 14 years old) and my dad asked which was their favourite Mexican dish. One of them said, without fear or hesitation: TORTAS DE JAMÓN. What a lovely memory!
And here I thought I was the only one that liked putting beans spread on my tortas. Thanks for the crema ranchera tip. I'm with you on the warm sandwiches, they always taste better to me.
El Chavo 🥪 I remember how I would buy ham by the price, rather than the weight, since we were on a tight peso budget. I'd go to the deli counter in the grocery store and the ladies would be calling out to people, and I'd say, give me 25 pesos of ham. Sometimes my husband would buy by the weight, "un quarto". He'd get caught by surprise with the price sometimes. Our favorite ham, "york" style, was pricey.
I'm a huge sandwich lover! And I tried my very first torta recently. Wow, yum! How did I go this long without one? Now I can make my own at home. Thank you!
So good!!! Let me count the ways?! Tortas de jamon, de lomo, de carne asada, de chorizo de carnitas,tortas especial, could go on and on !! So delicious!! Especially during long trips by car!! 😊
I spread Mayo on the telera and put it on the comal so it sticks on it. Then put the ham in the comal so the grease from the mayo cooks it. All other ingredients lettuce tomato are fresh. Get some jalapeños or serranos open up a coke and enjoy!!!!
Tortas de jamón y queso - the mainstay torta of México! When I feel in a 'basic' mood I get a torta de pierna. My local lonchería puts the sliced pork leg on the bread with mayo/crema, onion, tomato, and a little cabbage then puts it in a panini press. I schlep it home and add some homemade sauerkraut and mustard. Mmmm!
Father’s Day is approaching and making the 7 founding dads proud is harsh. Ham for Hamilton and ice cream for Washington. I’m letting go of the lab ruff and white powder hair after all, fortunately. Apple pie and burgers maybe. I’ve never been to the US, so I’ve extra special points on my quest to prove myself to the fathers. The constitution rests on my analysis table. Hamilton will be proud.

I always preferred the non toasted. The queso fresco and tomatoes go great on ham.

Any mexican grocery store sell them in their bread section. Just asked them where the bread for tortas is at. Added bonus pick up some Oaxaca cheese 🔥
The sweet bread is usually good but I agree it is hard to find a good telera bolillo bread. I just use sour dough or a French roll .

I think of all cuisines out there Mexicans did the best job at inter grating old/new world ingredients.
It looks the same, but my mom does it better. We use polish ham kraukus ham.

love black beans, and pretty common throughout Mexico
Use pinto then, or any other type of beans, or you can skip it and just use mayo, which is most common here in the north
