The Best Sandwich You've Never Heard Of

  • Everyone will say that what sets this iconic Puebla “torta” apart is the bread, the rambunctiously herby pápalo, great cheese and pickled chipotles. The round of bread is perfectly crunchy and crusted with sesame, the herb has a singular flavor (though some say it tastes like a muscley cilantro), the cheese is fresh and rich, and the sweet-sour smoke and spice of the chipotles are unique to Puebla. Add to those a crispy slab of beef, pork or chicken milanesa and more-than-average amount of avocado-well, you see why it’s a stand-out.

    Even without the perfect ingredients, though, I think this torta deserves your consideration. I’d recommend you try it with a toasted telera bun (I’d cut the ends off to approximate the cemita’s size). I’d ask for pápalo at your Mexican grocery store and, if they can’t get it, substitute cilantro. And, for sure, I’d make the sweet-sour chipotles.
    In Puebla, cemitas are most often constructed with crispy-breaded milanesa. I’m giving the recipe for beef milanesa here, starting with bistec from the Mexican groceries or thin-cut steaks (often called sandwich steaks) from regular grocery stores. Some Puebla cemita eaters leave off the meat altogether or replace it with pickled pigs or beef feet, both of which are in abundance in the markets there. A smear of beans on the roll-as is typical in most Mexican tortas-is part of some cemita versions, though I haven’t included it here.

    As a Poblano, I can say that it is a traditional cemita that you can find anywhere in Puebla. It looks delicious.

    Pro tip for fellow UK residents: there's a small cheese company in Halifax called Yorkshire Dama. It was set up by Syrian refugees and they specialise in halloumi, but they also do a range of Latin American-style cheeses, including queso Oaxaca, and you can order online.

    I'm at the end of day 2 of a 3day water fast to alleviate my shoulder injury....why am I torturing myself watching this?!! 😂🤤🤤🤤 that last shot of the finished sandwich looks amazing. I can't wait to have the time to make this!!

    I find adding water or liquid egg white helps to get the egg wash to stick to the meat. Adding cornstarch to the flour would help to crisp up the meat.

    Milanese where I'm at isn't cooked like that, I think my boys would love that. Santiago, DR . I will try, but as a tostata. Where I'm from originally, that's called chicken fried steak. Minus the avocado, but we have several trees where I'm at now, two varieties in harvest.

    Have you ever grated the avocado seed like they do in the Nuevo Leon region of the north east Mexico ? It turns from white to orange quickly, but adds a really good flavor.

    Milanese or as it's known in this country: Schnitzel or Country Fried Steak. The Austro-Hungarian Empire owned most of Italy (including Milan) until the late 19th Century. When it came to Vienna the locals called it Schnitzel. When the Austrian and German immigrants came to Texas they couldn't find any Veal at first so they would use the cuts of steak they had and began calling it Country or Chicken Fried Steak to separate it from their beloved dish from their homeland. So it's all the same thing.

      Schnitzel is not always breaded, it really just means 'thinly sliced', though breading is common too. Country Fried Steak is usually made with buttermilk + eggs and baking soda for a thicker, fluffier coating. And it's usually a thicker cut of meat, and served with brown gravy and onions. Of course every culture has a version of breaded and fried meats. The whole point of what Rick does is show you the typical Mexican preparations.

      Rick is extremely healthy, I think he still runs multiple miles every day. You have no idea what his full diet is on a daily basis, you're judging him based on making videos that he sees as popular and often requested. Nobody is suggesting you eat one of these every day, but a generally healthy person should be able to enjoy one occasionally. Health is much more than just what you eat.

    For the breading if desired you can combine the flour and egg to almost make a runny pancake batter, it saves a plate and it coats and sticks to the meat 100%

Of course every culture has a version of breadcrumb coated and fried meats. The whole point of what Rick does is show you the typical Mexican preparations.

      Beef tallow frying has a strong taste that dominates over the main ingredient, which is not good if it's not beef. It also leaves a greasy mouthfeel. It's especially bad for chicken, fish or veggies. There's nothing wrong with seed oils for 99% of the population. The amount you actually consume from deep frying is minimal, and nobody is suggesting eating fried foods multiple times every day. Of course you get to eat whatever you want, but don't presume your tastes or needs are relevant to others.
