Theres two ways to do with. 1, abrasive that cuts the surface stains but not the steel. 2, very fine abrasive that cuts the steel and of course clears the surface but it should be very fine to affect the finish as little as possible, but it will always make it somewhat brighter. The best solution is to use abrasive that can not cut steel, so only surface stain is removed. Whenever possible.
Thanks for your time on the phone. After sharpening my knife for quite some time on a weirdly mushy whetstone I figured I'd give a couple of carbon knives a go. Are any of these polishes relatively food safe (obviously not for general consumption but not poisonous)?
Thx for the comprehensive video. I just wonder how to treat damascus blades, or in general those blades that do not have a shiny surface. Is there a way to polish them without the need of new etching? Thx for feedback
Hi James, can I use this KOYO blue for new knife Yanagiba with Mirror Finish to remove tiny micro scratch?? Will the compound change the Mirror Finish look? Thank you 🙏
@@KnivesandStones ok. So I can use it to clean a mirror finish Yanagiba without changing the Finish and basically Just make it shinier without scratching the blade.

I don't think there are really "food safe" polishing compounds, I'd say toothpaste is the closest.

I use a German motorcycle polishing paste which does the same thing. I can’t remember the name.

no, it is way too slow for such purpose.
