Dear sir, it's very kind of you to spend your valuable time to answer my question. Two months ago I didn't know anything about decorating and I learnt even to hold a piping bag from you. Last week I iced a buttercream cake for a small function at home using simple borders and flowers you taught. It's all because of your clever teaching and feel so greatfull to you. Even GSA website is very helpful.Thank you very much for your effort and God bless you!
Excellent instructor, tells you everything you need to know at a great pace. Doesn't waste time explaining redundant details that are obvious - beautiful work he does
I love your video's. I have been making cakes for years and you are never too old to learn new techniques or implement your great tips to make decorating cakes easier or to obtain a better finish. Thank you
Amazing stencil designs! They add a different dimension to the cake that I haven't really seen before and I really like this concept. Your tutorial was very easy to understand. I will definitely try this in the future!
Very informative video. That cake was beautiful also. Now, I really want to start decorating cakes at home. That stenciling is tight!!!! I sure do have to start investing in decorating tools. Thank you Chef Alan Tetreault. Keep the videos coming.
I just bought my 1st global sugar art stencil! Thank you Chef Alan for this tutorial now I know how to do it all around a cake, I was wondering how people could stencil all around the cake. Thank you!
QUE BELLEZA!! EN POCO TIEMPO VOY A CUMPLIR MIS BODAS DE PLATA Y ESTA TORTA ES LA QUE ELEGÍ!! NO HUBO OTRA QUE ME GUSTARA COMO ESTA!!! GRACIAS POR COMPARTIR ESTA OBRA DE ARTE!!!!!!!!!!
The best way to remove a spot of color on your fondant is with alcohol (Everclear) and a Q-tip. Only wipe once then use a clean Q-tip again with alcohol until the stain is gone. You can rub in a little cornstarch over the mark to blend it in. The alcohol can sometimes leave a shiny spot.
+jamila echoufy It will soften in the refrigerator and can melt if there is a lot of condensation on the cake when removed from refrigeration. You really need to test your own kitchen to see what will happen as humidity and heat are different everywhere.
That is actually a carved cake that I have layered pieces on fondant to look like a spiral of fabric. It is a technique that I hope to post on UA-cam this year. You can also use a pedestal dummy cake for the same purpose.
Hello. Thank you for taking the time to do all of your wonderful tutorials. They are so well done and interesting to watch. Can stenciling be done on crusting buttercream?
The alcohol evaporates very fast so that the glitter dust stays in place. Using water may cause runs down the side of the cake. Also, water tends to work into the fondant and cause spots.
No, do not cook the egg whites before mixing with the powdered sugar. Royal icing can be flavored with mint or any other flavor you like. It is used sparingly when you stencil so the flavor is not a huge issue.
Mr. Alan, great video. You're my favorite cake decorator. This may be a crazy question, but here goes. After applying the stencil with royal icing, can you eat the cake? Royal icing doesn't taste good. I use mostly crusting buttercream icing for my cakes. I would love to apply the stencil on buttercream icing. Thanks for sharing your knowledge.
Royal icing is made with powdered sugar and egg white or egg white powder. It has no butter or shortening in it and it dries quickly and firmly. Regular icings normally have butter or some other fat to keep them soft. We offer a royal icing mix at Global Sugar Art or you can make it from scratch.
Chef Alan, Thank you for being so willing to share your art and skill. I am very curious as to how you achieved the fabric look between the tiers? I am so in awe of you and inspired by you.
If you use buttercream icing, you will not be able to to multiple stencil applications around a cake because the stencil will smear the buttercream when doing the subsequent applications. You may be able to use buttercream for a top stencil that is done in one turn.
You would have to dab in on the stencil with a stipple sponge or soft brush. It may be easier to liquify the powder first with alcohol or lemon extract and use the sponge.
Yes, you can stencil on buttercream with buttercream icing. Just be sure to ice your cake with a "crusting" buttercream and allow it to dry enough to that the stencil does not stick to it.
Unfortunately, they have not arrived in stock yet. We were expecting them over 6 weeks ago. Hopefully they will be out in January and I will post the product number.
Thanks a lot I'm lerning from your tutorial videos. I realy very sorry that I can't visit in US and partisipate in one of your floral courses. Thank you again.
To stencil on buttercream, you must use a "crusting" buttercream icing on the cake. This is an icing that contains a 2:1 ration of powdered sugar to shortening. In other words, for every 1 pound of powdered sugar, the recipe must not have over 8 ounces of shortening. Butter will not work as it keeps the icing sticky.
To stencil on buttercream, you must use a "crusting" buttercream icing. This is an icing that contains meringue powder, coffee creamer or egg whites. I will make a UA-cam on this early in 2013.
No, royal icing is very easy to make and easy to use. If you are a beginner, I suggest applying a stencil on the top of a cake first This will give you some experience before you try the sides which are a little more difficult.
the band is the tip of the century, thanks for that...Venkusa try marshmellow powder instead of egg whites and or add glucose to stiffen it up, make sure you beat your eggs to stiff peaks first then add the sugar and water or lemon or other juice
You can stencil on a crusted buttercream icing. A buttercream will form a thin crust if it contain egg white, meringue powder or powdered coffee creamer.
I always enjoy your tutorials thank you so much.. I love your techniques and your videos are so informative. where can I find your recipe for your royal icing. thank you
If the royal icing has dried, the band will not mark or ruin the stenciled decoration in any way. IF you choose to stencil with food coloring or some other medium, then the band method could not be used as the food coloring does not dry.

Yes, you can always dilute luster and pearl dust with lemon extract. It takes a little longer to dry. Just be sure to use extract and not lemon juice.
It is not frosting, it is rolled fondant icing. Once it dries overnight, you can easily apply the stencil without marking the fondant.
