Sourdough Fugazzeta Recipe | Argentina's Famous Cheese-Stuffed Pizza

- This video shows you how to make a sourdough version of fugazzeta. "Fugazzeta Rellena" is a stuffed pizza from Argentina. It has two layers of dough, mounds of melty cheese in the middle, onions on top, and the perfect blend of simple herbs/spices to complement the flavors of the cheese and onions. If you've never made a pizza without tomato sauce, this is the one to try. It's definitely a cheese-lover's pizza!
Dough Ingredients:
All-Purpose Flour - 250 grams
Water - 160 grams
Sourdough Starter - 100 grams
Salt - 6 grams
Filling:
Whole Milk Low-Moisture Mozzarella - a few slices
Fresh Mozzarella - a few slices or torn chunks
Shredded Low-Moisture Mozzarella - 6 ounces (150 grams)
(You can use a full 8 ounces (226 grams) of shredded mozzarella cheese if you aren't using any sliced or fresh mozzarella.)
Toppings:
Onion - half of a large white onion, thinly sliced against the grain
Salt - 1/2 tsp
Pepper - 1/4 tsp
Olive Oil - 2 tbsp
Parmesan Cheese - 1 tbsp
Finishing Toppings:
Dried oregano - 1 tsp
Olives - as many as you want
