      It was very good eating and traditionally we eat it as a snack on a cracker with a little bit of cream cheese!

    I like your recipe here buddy. I've noted this one down. brine for 12 hours with two cups of sugar to one of salt, great mix. The flavour top notch eating. I only keep stocked fish from the hachery too, not wild fish. I will try this one some time when I catch a stocked trout. Looked delicious at the end there. Great video, what better way to smoke and vacuum seal some fillets during the off season.

      My thoughts exactly and just the right mixture so it's not to salty. Great snack in the off season to wash down with a cold beer!

      Gotta be one of my favorite ways to eat it. I'm just watching your latest video and saw the big trout get away. Made me cry thinking about the smoker, lol!

    You are way better with a filet knife than I am. Good looking stuff Matt closest thing I have ever made to that was maple glazed salmon on my webber smoker but it was hot smoked turned out good though

      I guess I should have added that Mike! We had a little gathering afterwards and had a plate of snacks including some smoked salmon. The only thing that people ate all of was the smoked trout! Absolutely delicious!
