    Delicious TSCHIBUREKI with a crispy, flaky outside and juicy filling. The dough recipe is straightforward and effective, using common ingredients without the need for vodka or vinegar. The result of this recipe is a thin, firm dough that perfectly encloses the filling without tearing and creates tempting bubbles when fried.

    Dough:
    Flour - 250 gr.
    Water (boiling water) - 130 gr.
    Refined vegetable oil - 2 tablespoons
    Salt - 0.5 tsp.
    Filling:
    Assorted minced pork and beef - 400 gr.
    Onion - 1 pc. (80 gr)
    Water - 50-60 ml (depending on the fat content and juiciness of the minced meat)
    Salt to taste
    Black pepper - to taste
    1. Add salt and vegetable oil to boiling water before pouring the mixture into the flour and mixing with a spoon. Once the dough has cooled slightly, knead it by hand for 5-6 minutes.
    2. Wrap the dough in cling film or place it in a bag and let it rest for 30 minutes.
    3. For better taste, you can use a mixture of minced pork and beef. Onions can be finely chopped or diced with a knife.
    4. Divide the dough into 8 equal portions. Roll each portion into a thin disk 24cm in diameter. Spread a generous tablespoon of the minced meat mixture on one half, leaving a 1.5cm border around the edges. Place the second half of the dough over the filling, removing any air. Carefully seal the edges and trim evenly using a pizza cutter or a plate.
    5. Fry the patties in plenty of vegetable oil over medium heat until golden brown on both sides. Drain excess oil by placing the baked pies on paper towels.
    6. Serve the pies hot and enjoy every bite!
