    Amazing Video and Very Informative. One of the only videos I have seen of clear ice which gives so much details.
    I have a few questions
    Which band saw do you use to cut ice?
    How can we get the accuracy of Cutting Cubes?
    And what is the recovery in every block, like how much is the wastage in each 115kg block?

      No it's our ice factory with reg room temp. Inside the factory, we have a pretty large freezing room though. :)

    Hi, great video. Why put the ice cube sback inthe freezer? Are they not ready to go after being cut into cubes?

      no, they'll start to melt a bit, so will have a slightly wet exterior. if you were to bag them straight away they'd freeze to each other in the bag as the wet exteriors would fuse.

    How do you make the spheres? Do you turn the cubes into spheres or is there a shaping machine that is used?

      It depends which ones of the spheres you mean. Most of them are hand carved out of big clear ice blocks, but some, the smaller ones, are made in a Hoshizaki Ice machine.

    Does the pump get frozen into the block to be cut out later?

      Hi! The trick is to lift the block before it has completely 100% frozen to the top. Also, leaving the pumps in so they get frozen will damaged them.

    What temperature do you keep your freezer at for your cubes?

      We have a freezing room and we keep that one at around -20 degrees celcius. When you store your clear ice at home that freezer usually keeps the same temp (-20 degrees celcius).
      I would recommend low temp on your freezer IF you have the patience to "temp" the ice everytime before you serve it. :) When keeping clear ice stored at -20, a bit depending on the room temp and humidity, the ice will need at least 10-15 min to adjust temp before being served in a drink, otherwise it will crack.

      You absolutely have a point! If you pack "wet" ice and then pack them tight in bag they will freeze together. Even though its pretty easy to divide them again it still something to avoid. Freeze the ice cubes a bit seperated for a few hours and then pack them tighjt in a bag. Then they dont stick together at all.. :)

      You can get a ice block machine within the range of $5000-10000. It depends how big blocks you like to produce and also from what maker you buy them.
