      Try fry bacon grease use that. Also put in your in beans when making them. Then freeze the rest old Mexican trick

    Ive been making my own tortillas for years and have watched many a video on how to make them but where they almost always fail is not allowing the dough to rest. I believe that is the true key to getting a quality result. I rest 10 min and then portion and rest at least another 10 before rolling. It warms my heart to see someone do it right. You dont need much to make tortillas but you do need some time. Nice job!

    Resting the dough is key, as you said. Additionally, a tortilla press goes a long way in making quantities. Thanks for the great video.

    "Liquid gold" is a term/title that is tossed around a lot especially in cooking but I think we can all agree that bacon fat is one of those thing that deserves that moniker.

    I grew up in Tucson and the local Sonoran-style tortillas are all made without baking soda/powder, so props for a lard tortilla recipe that omits that chemical leavener.

      hahahaha yup. I just posted my video using bacon fat to cook popcorn instead of oil. It's so good and went really well with my "whiskey juice" lol 🥓🍿🥃 I need to try this recipe, I bet these tortillas go great with carnitas 🐖

    Dear Lard, I’m sorry for every unkind thing that I’ve said about you while growing up.

      Exactly. One must use lard instead of vegetable shortening to decrease our chances of getting diseases like heart disease and other metabolic syndromes. All vegetable oils, seed oils, and anything hydrogenated like vegetable shortening is very bad for you. Lard (bacon fat) is the best. So is tallow, duck fat, and grass feed butter.

    Excellent way to get children into baking which doesn't have to use yeast and perhaps get bad results that will knock their confidence.
    Also experience in using a rolling pin !

      A tortilla press is great for corn tortillas. I like the control you get with a rolling pin when making flour tortillas. -Chef britt

    These look great. I make my own bacon and am always looking for things to use my saved bacon grease! Can these be stored? If so, how and for how long? Thanks!

      Yes! I’ve been making a slew of tortillas prior to shooting this video. I cool them on a wire rack, stack them and wrap them in plastic or place in a ziploc. You can freeze them, although I’m not sure what is ideal time-wise. Probably no more than a month or two. I also store them in the fridge and re heat them as I need. Hope this helps! -chef britt

    I can't do flour due to my kid's gluten allergy. I make my tortillas from fresh ground nixtamalized corn. I've never seen a recipe use fat/lard with corn tortillas, but I'm wondering if adding some might work. Have you ever heard of/tried using bacon fat with corn tortillas?

    ATBBQ “chef”: “Autolyse for 10 minutes”. Normal person: “Rest the dough for 10 minutes.” My favorite was Tommy Boy throwing around “mirepoix”. Love the recipes but put off by the pretense.

    Love the channel....but for a "cooking" channel you are honestly using a jar or store bought bacon fat?
    Bacon fat has to be one of the easiest, quickest, cheapest ingredients that stores for very long periods....why would you be using store bought?

      I already used my bacon fat reserves testing this method at home. I don't need to cook a couple pounds of bacon just to shoot a video using bacon fat. That would be wasteful. -Chef Britt

    Has anyone else noticed that when chef Britt is on the ATBBQ page most of the comments get deleted? That why she has 70 comments compared to chef Tom. She sure loves all the comments saying how pretty she is but as soon as someone corrects her or doesn’t agree with her their comment gets deleted. How is that right? I never see that on chef Tom videos.

      I'm not sure where you're getting your information because every single comment thread on our videos has someone wanting to argue, whether it's our cooking method or our appearance. This particular video's comment thread was surprisingly positive. Until you came along, that is. It's disappointing to think that because no one had anything bad to say outright, that you believe I must've deleted them!
      That being said, if you are making it a point to spread negativity time and time again, we may interfere. Especially when it doesn't have anything to do with cooking/bbq. We don't really delete comments unless they are attacking other viewers, or are just plain harassment. And I say we because there is a team of folks who monitor these comments.

      I have been on this channel a lot longer than you have. I’ll tell ya that. And It is very clear you and chef Tom are on this channel for two very different reasons. You like the attention that follows in the comment section. While chef Tom is all about the hard work and food. I never see him pondering through which comments to debate with others. You have said a few times you have a husband? Appears he needs to give you more attention at home.

      It should be noted-- the chefs do not delete comments on their videos. If a comment is deleted, it's by a department head. But everyone should know, we RARELY delete comments because we want this to be an open forum. However, UA-cam does automatically filter comments if they are crass.

    One should not use hot tap water in cooking since hot water heaters are made with lead and other harmful metals etc.
    Warming cold tap water on the stovetop or microwave would be better options.

He frequently doesn't know what he's talking about. He usually just spouts off some tinfoil hat crapola, probably from a fellow tinfoil crowned Facebook user, in an attempt to scare folks.

      I can’t recall the brand...I found it at a home improvement store. It’s supposed to be a paintbrush for creating a denim texture on walls! 😅🤷🏼‍♀️ -chef Britt
