The most basic definition is "union of human consciousness with the higher/universal consciousness." Unfortunately it cannot be understood fully through words, beacause yog can only be experienced. But I will try. Right now you are conscious of only yourself. You can see, hear, touch, smell and/or taste anything around you but you cannot fully experience them. So your experience of life is limited to the 5 five senses of your body. The moment one trancends the limit of five senses and physical body, one can experience the limitless nature of life, which is there all around us, in every creature, in entire cosmos. That state of experience is called yog. But the journey to reach there is also referred to practice of yog or yoga.
