The east africans also eat this okro stew but with corn meal called Ugali, Pap, Posho, and other names and just as the Ewe style Ewokple or the northern Tuo. All made in tbe same pattern. But Banku is also maize/corn dough or meal with added cassava. The ugali is very much same as what you call as Grits in America or Polenta in Europe or what you mentioned while preparing it.
@kinzababe1 the garden eggs are same as egg plant or aubergine, just a different variety but you can use egg plant or aubergine as a substitute also by peeling it to get the exact taste, i don't really peel it i just chop it just like i do with the garden eggs. And with aubergine/egg plant you get to not buy too much as the size compensates to you getting enough for the quantities needed unlike sometimes having to buy too many small garden eggs costing more to get the amount needed. The Ewe (pronounced evve) people call this food Fetri Dechi, its their traditional staple food, also in Togo Benin and Nigeria and i think Ivory Coast.
@kinzababe1 Okro stew tastes better when you have an assortment of meat as its a one pot and the flavours combine to give lovely flavours and aroma to the okro stew. Usually the okro and garden eggs are partially cooked and added last because they shouldn't get over-cooked. And this is exactly how Kinza and shaddy did it. Well done and foid looks perfect, however you could have had a few extra banku made instead of two in case you wanted to go for extra.
Kenza. You are great . The way you guys are making backu is the same way I made ground rice . And my grandmother used cornmeal to make ,turned cornmeal , know I see where it come from . I will be in ghana on 2nd September 2024. Can come so you can teach bamku .please. 😅❤❤
@kinzababe1 For moulding banku you don't necessarily have to use plastic bags to mould, thats for those selling, but a small cereal bowl with a little drip of water to moist it from sticking is what is used to mould it, you just throw the banku in the bowl and toss it about till it shapes into a ball and you store them in a thermos bowl or container or any container that can retain heat.

Do you remember i asked you to ask those seeds people to get you the red/purple corn from the western region? Tell them you want Nzema Aburo, really tasty too even when you make banku with it. Or even porridge. Those people selling you the corn seeds can get you some to plant.

But I had to point it out for others to know not to make that mistake in Africa. Banku and fufu makes people lazy as its very filling and heavy. That how we do our island dish called fungi (foon-ji). Which is made from yellow maze/ corn meal and okra.
