FF8 is a great game but you will need patience for the story.
I loved FF8 growing up, but as an adult if I had to recommend only 1 game to try out. I'd try FF10 :D

I hope you play Final Fantasy VIII. I know it's a very contentious game but it's really really beautiful and nostalgic despite its flaws.
