      Bon dia
      Do you guys have good type of beef? Because in Spain we have a bit strange kind of meat. The longer we boil, it becomes harder in texture. Dicen que en la parte norte se puede encontrar mejor tipo de carne, no lo sé. Supongo que en Portugal tenéis suerte si la carne está más suave. Obrigado por el vídeo de todo modo. 🇪🇦💓

      @@Travelgramers It's lovely to see u guys improvise some ingredients that weren't available in your area like substituting lemon leaf from d kaffir lime leaves. In many Malay dishes, like curry, masak merah, rendang, tomato or ghee rice, we always use d same base ingredients, ie sliced onion, garlic, ginger, a piece of two of small size cinnamons, cardamoms, cloves, star anises. When d aroma lives up, then u can add d ground ingredients, for rendang, red n dry chillies, onion, garlic, ginger, galangal, lemon grass, tumeric, leave for few minutes, then add chicken or beef pieces, coat d meat with d ground ingredients till fragrant, then add diluted coconut milk, let it half cooked then add d thick cconut milk or cream till fully cooked, just before that, add kerisik, a paste of ground toasted grated coconut, season to taste with a little sugar n salt depending on d portion. If u like it to be sweeter, add palm sugar or brown sugar at d earlier point when frying d ground ingredients n adding meat. Anyway, u guys did a good job with making d beef rendang. One of these days, u guys r going to be very good at it. 🙂

      Many aromatics leaves can highlight d taste of rendang. In Malaysia, we use turmeric leaf, kaffir lime leaf, n u can even use dry bay leaf. I prefer to use thinly shredded turmeric leaf for my rendang.

    • @Yasin_Affandi
      @Yasin_Affandi 2 роки тому +4

      @@FoodandFootprints Yes, all these leaves r very aromatics esp d kaffir lime leaves, very citrusy. But I always use d finely shredded turmeric leaves as in d traditional malay rendang recipe. Adding crushed lemon grass also will.make rendang more flavorsome. In d rural.areas, folks will sometimes add ulams in their rendang, I used to have a neighbor who liked to add a kind of pudina leaves in d rendang, n it became quite crispy when d rendang is cooked to dry consistency. Delicious. But having said all that, like I mentioned earlier in previous comments about rendang, nothing compares to my late mom's rendang, d best in d world, tasted so many rendang in my life, from neighbors, friends, street stalls, restaurants, my late mom's rendang was still d very best. I always help my late mom in d kitchen, but I didn't learn any recipe incl rendang. I only learn traditional rendang from my late grandma in Kuantan few years after my mom demise. Oh well, rendang n nasi lemak, that's d best for me. Nowadays, nasi lemak is commonly paired with d spicy fried chicken. 🙂🤗🙂

      U guys probably know this, that d padang rendang from Indonesia was d top most popular dish in d world in a survey by d CNN Travel for 2020. Char kway teow was also in d top 10. There's always a debate about d origin of rendang from Indonesia n Malaysia. As far I Iknow, there's no influence from any Indonesian in d Malay traditional rendang. In d early 1980s, my dad was working in Jakarta, met some new frenz in d city n talk about food, none knows about rendang, it's not a festive food in Jawa. When my mom passed away in Jakarta, n brought back to Kuantan for burial, few years after that my late dad married my stepmom, a javanese from Jakarta, she also don't know much about rendang. When we were living in damansara heights in KL, my stepmom had few maids originated from Sumatra, they don't know about rendang. When something is not documented properly, it opens up to many possibilities. Once there was a descendent of Malacca ruler fled to what is now Riau in Sumatra. D rendang recipe could exchange hands from older generations to d new generations, now, not only d Malay n Indonesian can cook.rendang, all people around d world likes this dish. Well, who would have thought a couple from.portugal will cook this rendang in their home sweet home. 🙂🤗🙂

    Congrats for your successful beef rendang cooking session. 👍👍👍 I can understand that some of the ingredients are not available in Portugal, but I am rather surprise that the Maggi rendang paste does not include include ginger, lemon grass and galangal (a "cousin" of ginger) in its paste mixture, since I have never use the rendang paste before. Very creative of you to substitute the kaffir lime leaves with lemon leaves. Another thing is we normally add some tamarind juice, you can try substitute with lemon juice. Great that you can still remember "ayam", "campur", "merah" after more than one year.

      I'm not quite sure to be honest as I didn't translate the ingredients on the back of the package, but maybe it contains all those. Thank you 💛

    for rendang 'kerisik' (coconut paste) is a must. but I know it's hard to get it in ur country so I think it's ok. but still u guys do it just fine. u can see in youtube on how to make kerisik. overall making rendang need an hours of effort just to prepare the ingredients. lucky now there is instant paste in Malaysia that have everything in 1 pack. good job guys

    is there any asian shops there? you can grow your own lemongrass, ginger, galangal and turmeric there.. in the end you can also put in thinly sliced turmeric leaves for more authentic rendang taste. oh yes, asam keping too for a lil bit sour taste.. overall your rendang looks good and tasty🤤🤤🤤🤤🤤🤤
