It's because birto takes up more of the screen and yoshi is a more none mario kart charecter because yoshi has been in all mario kart games so they think that birto came out as a replacement trust me I grew up with all nintendo consoles and own every mario game ever but only some Japanese releases mostly us releases

He is super kid friendly, practically every kids favorite Mario character, he has a cute dog, and he went out his way to help Baby Mario get Baby Luigi back. Yoshi is just too wholesome to not like.
People use Yoshi over the other three characters because he’s just extremely well known. That and the color palette he has. I’ve used Daisy the most out of those four characters (due to her having the thinnest inside drift build…and the fact that she is my favorite character) btw.
I’ve used yoshi since I was 5 years old on Mario kart Wii, and I have always stuck with him. The fact that 15 years later he is meta now on mk8 deluxe always makes me smile :)

A lot of people don't know about the characters with identical stats, Google what the best combo is, and then see Yoshi/Teddy/Roller/Cloud. It's the same reason you don't see many Cat Cruisers or Flower and Parachute gliders, most people just aren't going to look into it that deeply.

Everyone wanted to play with Yoshi as a kid, and now that he is meta everyone is taking the opportunity to finally play with their childhood character and he's optimal. People don't play Birdo for the same reason they don't play Birdo in MKWii as a casual, not a ton of Birdo fana. The princesses have some people would like to play them, but there are more Yoshi lovers than the Mushroom Kingdom princesses.
Unlike with Waluigi, Yoshi doesn’t actually give an advantage compared to Peach or Daisy. Seeing as Waluigi’s frame was smaller than DK and Roy (and probably Wiggler too).
Yoshi has always been an option, so a higher chance of people know and like him over Birdo. And Peach is kind of boring. Then when it comes to Daisy, it's the colours.
I’m not complaining about Yoshi being popular. So this is a win for me! My favorite colored Yoshi’s are the classic Green Yoshi, Yellow Yoshi, Cyan Yoshi, Black Yoshi, and Red Yoshi. I think they personally fit well with many kart varieties.
I literally don't think it's that deep. It's the fact that people are "sheeple". Once world records started getting Yoshi used, people just started copying and it became the norm for people to just copy. I can guaruntee that if you, or someone else made a video with a valid arguement that Peach is theoretically the best character because her frame is skinnier (hence more view of the course ahead - a legitimate arguement people loved to use for using Waluigi pre wave 4), people would start picking Peach, and then that would catch on. It's even more sad when you consider Tanooki, and Males Villager and Inkling are basically identical too bar a couple of pointless stats, so there are SEVEN characters that are arguably tied for the best in the game. That's HUGE and has never been this way in any other Mario Kart game... yet people still mindelessly pick Yoshi
Yoshi is cute and has the best voice lines. Peach is alright, but kinda boring. Daisy looks cool, but has earbleedingly annoying voicelines. Birdo's mouth and bow are ugly asf, and her voicelines are annoying.
I mained yoshi before the balance patch, and even before I knew what combos were good or what stats to get. I'm glad I can keep using it as I get better at the game, but I'm also sad that everyone else is using it and I look like a sweat when I play, even without teddy buggy/roller/cloud
