- We made Gateau Basque for Valentines Day!
We used the recipe from Dessert Person.
There are three components to this recipe: the cherry compote, the pastry cream, and the crust. Everything came together wonderfully and tasted absolutley amazing. This recipe is a show stopper for sure.
Just be sure to give yourself plenty of time for all of the chilling that needs to happen between every step. It takes a long time, but definitely worth it!

Lol. I'm making this right now and the dough ended up the same, I thought no way! I feel better that other people's looks the same
I just made all the components to this, and am hoping to assemble and bake tomorrow morning for someone's birthday 😬. I came looking for youtube videos of anyone making this recipe, because the dough seemed so soft to me! Every other gateau basque recipe video I have ever seen uses a much stiffer dough, but this one is so soft that I was worried about rolling it out tomorrow 😬, so your video made me feel better! I was confused about the kneading comment as well 🤔. thanks for demonstrating 👍
also, was that a 9 or 10 inch tart pan? I multiplied all the ingredients by 1.25 because I only had a 10 inch tart pan and she uses a 9. Even the eggs lol. You can imagine how much of a pain in my a** that was. 🤦🏻♀️ you remind me a bit of Keri Russell!
That was fun! I keep skipping past this recipe in the book because the picture doesn’t inspire me, but now that I’ve seen how it is made, I’ll put it on my list. Glad I stumbled on your video 😄
