Sushi means sour tasting, it is vinegared rice usually served with raw fish and vegetables. Sashimi however is raw sliced meat which I think is what you may have meant!
I don't see how this is impressive beyond the peeling aspect. With practice, like anything else, this is a mundane task. It is a simple wrist movement, in which his hands are in no danger of being cut due to the way he holds the apple. The sharpness of his knife is the aspect here that makes it impressive.
