  • We are smoking a spiral ham today on our Traeger grill! We are making a tequila lime glaze that will seriously blow you away! I am new to using a SMOKER and have been loving experimenting with my Traeger. I asked you guys on my Community Tab what video series you were interested in and you said you wanted to see a Traeger Smoker Series. What ideas do you have for an upcoming video?     Dry Rub:
    1 teaspoon Pink Salt
    1 ½ teaspoons Black Pepper
    2 teaspoons Garlic Powder
    2 teaspoons Onion Powder
    3 tablespoons Coconut Sugar
    1 tablespoon Paprika
    ½ teaspoon Togarashi Chili Powder
    Glaze:
    ½ cup Tequila
    1 cup Coconut Sugar
    ½ cup Honey
    1 Lime (zest + juice)
    3-5 pound Fully Cooked Spiral Ham
    1. Combine dry rub ingredients in a bowl and mix well. Apply the dry rub to the ham and set on a wire rack over a foil lined pan. Start up the pellet grill and set to 275F. Once it comes to temperature, put the ham in the center of the grill (keep it on the pan). Place a probe into the thickest part of the ham. Set the probe alarm for 135F.
    2. Meanwhile, combine the glaze ingredients in a small saucepan and bring to a simmer over a medium low flame. Reduce heat to low and simmer for 5 minutes, stirring often. Then remove from heat and cover.
    3. After 1 hour, rotate the pan 180 degrees. Continue rotating each hour 180 degrees until the temperature of the ham reaches 135F.
    4. Apply a thick layer of the glaze to the ham. Remember to rotate ham 180 degrees each hour. Set probe alarm to 145F.
    5. Apply one more layer of the glaze and close the grill cover for 5 minutes. Remove the ham, let rest for 20 minutes. Enjoy!
