In the very early '90s I spent time in Nicaragua and El Salvador, most of it in the countryside. The food was fantastic because it was so simple and connected to the land. The food is fresher because it is grown/raised right there by people not corporations. In the U.S. corporations own most food production and we end up with highly processed foods that we buy in supermarkets. I had pupusas for the first time in El Salvador in a small village where we were staying. No pupusa I've ever had in the U.S. comes close to what I had in El Salvador. In Nicaragua, there was a restaurant in Managua we went to several times. It was all vegetarian and the dishes they made with plantains were out of this world. I wish I had paid more attention to their recipes and techniques. I was part of an aid caravan to Nicaragua in 1990. We had to drive through Honduras. When we finally got through the border from Guatemala we drove to the first village in Honduras. We went to the cafe across from our little motel and they didn't have enough food on hand to feed us all. But they implored us to wait, which we did, while they killed the chickens and cooked them fresh for us. We drank all their beer while we waited, and it was worth it. One of the best meals I've ever had. So memorable.
The food is clean and made with love. There’s something spiritual about knowing exactly where your food comes from. I went to Italy a few years back and this reminds me of my trip, spending time with family and being immersed in my culture
No wonder all your recipes look like the food my mom makes. We are also from Michoacán. We are from a small town called El Poblado De Dolores. A little over an hour from Morelia. She hasn’t had the patience to teach me. And now I can make them and teach my girls ❤

This is so awesome. Honestly I'm so captivated by Mexico recently, moreso than anywhere else honestly. So it's awesome to get a glimpse of life beyond the big city, and moreover a very authentic look at people simply enjoying life. Maybe someday you two can go on a similar trip to El Salvador and show us a similar glimpse? Plus if you're ever running low on Mexican dishes you're familiar with, you could learn some Salvadorian cooking and share recipes with us... Either that way, or Nelson could start teaching us ;)
This isn't much different from life in the swamps of Louisiana, love how you referenced frybread! But we scrambled to have regular crawfish boils with what the swamps provide
