In this episode, watch chef Ruchi Bharani makes an interesting recipe made out of eggplant.
Ingredients:
1 Eggplant
1 Finely Chopped Onions
1 Finely Chopped Tomatoes
Coriander leaves
2 Tbsp Oil
1/2 Cup Boiled Green Peas
1/4 tsp Asafoetida
1/4 tsp Turmeric
1/2 tsp Garam Masala
1/2 tsp Cumin Seeds
Salt
1 tsp Coriander & Cumin Seeds
2 Green Chilies Chopped
1/2 tsp Red Chilly Powder
1 tsp Ginger Paste
4 Cloves Garlic
Method:
- Make slits in the eggplant and insert the garlic cloves in it
- On medium Flame, put the eggplant and roast it and keep turning it slowly over time to time till everything is nicely roasted, Soft and cooked.
- Once its cooked, put the eggplant in a bowl and cover the bowl with clean wraps
- Meanwhile in a heated pan, put some oil.
- Add cumin seeds to it & let it crackle
- Add onions and ginger paste and saute it till its nice and cooked
- Add tomatoes and green chilies and mix everything well
- Add asafoetida, turmeric powder, garam masala, coriander and cumin seed powder, red chilly powder, salt and mix everything well.
- While its cooking, remove the wrap from the bowl and remove the burnt skin from eggplant and mash it well.
- Add the eggplant mash to the tomato mixture.
- Add the boiled green peas and coriander leaves and mix everything well
- Add 1/2 cup water and salt so that everything cooks well and the dish is ready to be served

I can tell it is yummy, because I had it recently in Indian restaurant and now I'm going to make it. I love to bake eggplants the way you do, I love the smell of charring eggplant and don't mined cleaning, especially when I use one trick - I put piece of aluminum foil under around the burner and just throw it away after..Another tip how peel eggplant easier - I let it cool a little, then cut our stem and cut eggplant in half lengthwise. Then just scoop the flesh out with the tablespoon. I believe I can make okra with the same ingredients you make the eggplant. Right? Thank you for taking time and sharing this with us.

Just one suggestion guys if you cook eggplant in oven for 1 hr(preheat to 400) it cooks well and its easy to do as well ;-)

oh no,please dont tell them to put in the stove. Nothing can bring out the flavor like fire grilled roasted egg plant.This is the only way, the best way. Oven just steams it inside the skin and has no resemblance to the fire grilled version.
Fire Grilled is not found much.. So we tried to make it as convenient as possible!

everything but the peas
instead of frying just mix roasted garlic, green chillies, coriander leaves, mustard oil and mix together with smoked eggplant ... do not add peas or fry it after mixing.. it wil taste far better.

Looks good. Trying it right now but not sure about step one. How long would you put it in the oven for and at what setting and temperature?
You can put it in the oven, i don't know the temperature but it would mean you only have to clean the baking tray you put it in on, not the gas hob, cleaning which wrong is dangerous! Oil the tray lightly to stop it burning and sticking maybe (less cleaning). Potatoes bake at 200 centigrade so it's probably about that. Just till it looks cooked like in the picture. Will take a lot longer as oven has to heat up etc. Put on shelf near the top, use fan if have one.

how long does it take to char the eggplant?
Why is it burned on fire? Can I stream it in momo steamer?
Can I put an egg in it?
Obviously no one actually cooked this recipe, or didn't observe the ingredients and procedure properly, coz she doesn't use the cloves of garlic during the preparation !
She put the garlic in the eggplant by cutting little holes for hem

Removal of outer skin of baingan is very bad. Any recipe which is tasty
and easy that does not include removal of outer skin of baigan.
