Flap steak is great for carne asada. Other than me being cheap i'd get it more often at costco.

Hey team Neal & Amy,
You are speaking my language! Flap Meat, aka, "Ranchera" in a Mexican Carniceria's, is somewhat similar to flank steak in that the grain of the meat is running east/west with no deviation and a lot of intramuscular fat. It makes perfect carne asada! I'm a big fan and it's often one of the 3 meats I incorporate into my homemade ground beef. Usually I aim for .333 of Flap, Chuck, and Brisket on a medium die. Good stuff!
In regard to salsas, I nearly always add good ol distilled white vinegar. When you taste your salsa and you think it needs salt, add a splash of vinegar, then taste it again. If it still needs more salt, add 1-2 tsp chicken bullion powder. Taste again. Finish off with a pinch or two of salt. All legit Mexican Food Restaurants use the secret "Knorr Chicken Bullion" powder in their salsas.
And nothing quite completes a recipe like these tacos than a nice squeeze of fresh lime juice and some mince onions and cilantro :)

You said the meat cooked very fast. Since there were edits during the cooking a viewer can’t tell how long it actually took. A suggestion, post a running clock on the video that shows the actual cooking time. So if after a minute you edited out 30 seconds, after the edit, the clock would go from 1:00 to 1:30. This would be very helpful on many of your videos. Thanks.

That looks awesome. Im trying the salsa with my tacos. I have never made salsa. The 20 yo Treager finally died on me this past weekend. Won’t have the Lone Star pellet grill for probably 6-10 weeks. Just picked up a Webber Searwood xl at Lowe’s today, and put that together. I’m too damn tired to cook anything tonight, but I got to have some Mexican food.

Flap steak is also known as hanger steak. There is only one per cow. It used to be known as a ‘butchers cut’ since most butchers kept it as ‘trash’ cut that they saved for their own consumption. It’s a great cut of meat!

I dont disagree...but the meat had so much seasoning...did think it would have worked like intended...
Did fajitas a while ago with flank in a quick marinade of Lawry's, chili powder, cumin & a touch of cayenne (cuz the wife don't like real spicy either), sauteed in bacon fat (I think) with minced (or finely chopped) onion & garlic - might have been a splash of the W-sauce too. That was oh sooo good! Sorry I digress, but your video brought back nice memories of it! Thanks!

Garlic is easy to grow . Needs to be planted this fall for next years supply . Use garlic that you buy at the grocery , break apart and plant each one .
