What Entrepreneurs Can Learn from Pizza Hut and Kale

  • Up until 2013, Pizza Hut was the largest buyer of kale in the United States, but not because their customers ate it. Rather, the pizza chain bought kale as decoration for the salad bar.

    Over the years, Kale skyrocketed in popularity.
    As this leafy green grew in popularity, it shifted from being considered inedible to a food item that the wealthy overpay for (I'm not hating on kale, I love it and it's healthy).
    But it makes me wonder: What is the thing that in 2022 is undervalued, just like kale was in 2013?
