I've always paired spicy food like Mexican or Indian with white wines. Sometimes Sauvignon blanc, other times Viognier, Pinot Gris, Alabariño and even Chardonnay. Today I tried a Riesling with some spicy Mexican food and it was awesome!!!

Very well formulated tips, and a great series overall! :) If one was to go with a red wine with spicy dishes, I'd just like to add that usually a less dry red wine doesn't add to the fiery sensation of the chilis as much as a spicy wine with strong tannins does. The grape variety Gamay for instance, makes a very soft wine which suits light, hot dishes. Hope that helps! :)

There was another video of someone recommending Syrah with Spicy food..
I'm slightly confused now.
There's not one answer for pairing questions, Rajesh - it's a matter of personal preference. But also, the word spicy can mean different things. Syrah often does have a peppery smell, especially those grown in cooler climates. In wine pairing, aromatic resemblance is a great first step toward wine harmony and many Syrahs pair nicely with foods that are "spicy" in the sense of having bold flavors of seasonings, like a mild curry. The issue I'm discussing in the video is a little different, though: spiciness in the sense of spicy heat, the burning sensation associated with chilies or hot sauce. The stronger the heat, the more alcohol content can become a problem and Syrah has higher than average alcohol. That's why I recommend the lowest alcohol wines for the foods with the spiciest kick. But if you're one of those people who loves the burn and the sweats, you may actually prefer stronger wines with hot foods!
Also, a white wine would be chilled and counteract spice better than a room temperature red.
