pro tip.. pull the clams out of the sauce.. reduce it down by 1/2 then add the pasta and clams back.. it will make for a more flavorful sauce and you will not over cook the clams.
Hey Jimmy! Nice execution there! Just a couple of suggestions: some clams (at least here in italy) still have sand so you need to clean them by letting them open in salty water. Good quality pasta might be slightly more expensive but it will change completely the result. It's more starchy and will hold up the cooking better. At the end the difference might be one euro for half a kg of pasta, enough to feed 4-5 people.

I ate this dish in Sicily a few times and i had a tough time getting the same flavor intensity at home. After bribing the maitre d' he gave up the fact that the description on the menu is incomplete. The best way to make this dish more like the Sicilian masters is by either making a shellfish stock and reducing it...OR...buy yourself a bottle of Colatura Di Alice (a type of Italian fish sauce) and add a little of that. Try it--it's the difference between good and great!
@@100pcRenewables it will make a big difference. Also, you only need a teaspoon or so for 2 portions so it will last you. It keeps forever. you can also use a GOOD quality asian fish sause but colatira is better imo

I know jimmy started out in cali but he learnt his english on tv. Also, i feel like flatting the "r"s makes words easier to pronounce for me since we dont have many soft "r"s in our language.

i thought some depth of flavor was missing for me too, and i found that chicken stock/broth does the trick for me!
