      for single colour filling, pull the piping bag over a cup and fill it that way. way cleaner.

    I never thought about laying the colors on a sheet of sticky wrap before putting in the piping bag. Will definitely use this method in the future.

      Just make sure you cut enough off of the bag or it will drag into the holes and cause your outcome to be a wreck. The bag inside of the bag is what I mean to make sure you cut enough off of .

    Aside from the ball tips, the most valuable take-away for me was the fact that you spread your icing onto the Saran Wrap and that you could just drop that into the piping bag. You made my life so much easier!

    I picked up priceless tips in this tutorial!
    The use of Press-N-Seal wrap to make the icing logs is brilliant, and I would never have stumbled upon it because I've never purchased that plastic wrap. Huge thanks!
    I also like the idea of creating buttercream buttons, sugaring them and freezing them so they can be handled.
    The rainbow ruffled effect gave me an idea for creating collars for elves, angels, mimes, Santas, using a hollow sphere of white chocolate for the head.

    Marlyn, Thanks for demonstrating the ball tips. I've wondered how they'd look.
    The twisting technique you used to ruffle the buttercream is super and I particularly appreciate learning how you striped the colors applying them with piping bags.

    This is, by far, the best demonstration of Russian piping tips I have see. Have seen videos where people just pile on the icing using these Russian tips, and the cupcake ends up looking horrendous. Your technique does an absolute justice for these piping tips.

    what happens if you continue to squeeze as you lift off the ball tips? wouldn't it close the whole?

      i was thinking the same thing. maybe with the first one she used will not fill the hole. but the others with the holes on the tips will cover it. thats what the holes are for.

      Thought the exact same thing. The ones with the opening in the middle may have added to the hole....

      Hi Colleen, I've tested that but the center flower opening isn't large enough almost no icing comes out since the pressure is released via the larger side holes. As you pipe and lift you're always left with a large gap in the center of the icing without any center support the whole things collapses and looks very sloppy.

    The ball tips with the hole at the end is so there's no hole in the middle when you make those flowers. You just don't push the tip down against the cupcake

    don't the ones with the star hole in the middle not leave a gap if you rised as you twisted?

      That's the point of them. The ones without the gaps on the top aren't meant for doing close circular designs.

      Agreed! Very thorough, and I think your icing is the right consistency as you've said. Too stiff, and the edges all look ragged. Great job!

    Just ordered a set of the ball tips and flower tips, can't wait to try them out :D Thanks for the tips with the press and seal plastic wrap that's an awesome way to get multiple colors in a piping bag and being able to just take it out and put it in another bag with the flower tips are awesome ^_^

    I feel like when you use the ones with holes in the tops that maybe not putting it up against the cupcake wouldn't leave an open space. Also, I love your icing cylinder technique!

    I don't actually think those ball tips are new I found some just like the ones in this video when i was clearing out my grandmothers house. She got them in Austria during the army of occupation.

    Thank you for the very explicit instructions on exactly how to use these Russian Tips! I was completely lost until I came across your video. My problem is still finding the correct American Buttercream recipe that works with these.
    After watching several of your videos, I keep hearing "squeezing and rocking, squeezing and rocking, back-n-forth...back-n-forth!"... Lol...!
    My husband just laughs and shakes his head...

    Thanks! I'm a fairly experienced baker but it had never occurred to me to use clingfilm to layer up the buttercream colours, but have always done it inside the piping bag, which can be messy and as a result I've restricted the number of colours. Now I'll use your method, thanks! Have subscribed. I particularly found your calm presentation helpful.
