Because of you John, I've not bought a loaf of bread since Christmas. And I've stopped buying cakes and biscuits too - I make your Orange and Lemon cake twice a week. YT kept recommending your crumpet video to me. I don't usually click recommendations but I caved because I love crumpets and it kept coming up. This is still my favorite channel on UA-cam. I don't know if it's because I'm a northerner myself (albeit from Scandinavia), but I can't stand all these loud and self-centered chefs on UA-cam who shout out their recipes and let everything be drowned out by loud music. They are certainly skilled as well, but I have much more confidence in a soft-spoken, humble and experienced master like Kirkwood.

100% true, everyone should try no-kneed doughs. I make a pizza dough enough for 4 pizzas about 30cm in diameter, thin crust, with only 1g of yeast, leaving it covered in the fridge for several days, up to a week. The taste is SO much better than the same recipe with 8g of yeast, and leaving it on the counter for an hour and a half. Much more complex and delicious.❤👍
And if you kneed it a bit (not fully), you can get VERY thin crusts for your pizza, it tastes amazing.😁
John and viewers, I'm afraid I have adopted the no-kneed method for literally all bread making recipes-I usually add salt and butter or a bit of oil or both (about 50g/ml) and mix till no visible flour and cover and leave it for an hour or two-the flavour is amazing and it is soooo much easier, I have never been a fan of kneading-my husband however finds it therapeutic, maybe its to do with being tall enough compared to the height of the counter? Either way-no knead has been a game changer for me. Thanks for the video xx as ever xxx

Very similar to the loaf I would bake, I roll it up too, but turn through 90 degree twice, so 3 rolls, nice tight crumb in it. Cheers for the video mate.

No Knead is also much more forgiving of minor recipe and environmental differences. If you knead it, it rises as fast as possible, so you have to pay close attention to the timing. With no knead, the initial rise happens irregularly, and that irregularity preserves the starch in the parts of the dough which don't rise, which ensures a consistent amount of the starch is still around for the next rise. So you don't have to be super accurate with the temperature, hydration, or even the initial rise time with a no knead technique. Now a tip for non-commercial cooks. For the second and third rise you can accelerate it a bit by microwaving the dough to an average temp of 35C. So ideally you microwave it before you form it, and in forming it you mix it so that the temp is uniform. I find 30-40 seconds is sufficient, and then the rise time is only 25 minutes. Lastly, John's direction to place a tray of hot water in the bottom of the oven - this is really important esp if you make sourdough. The reason is that the outer layer of the bread dries quickly in the heat of the oven, forming an airtight shell, which then traps gasses escaping from inner layers of the bread. That creates an air pocket between the crust and the loaf, which browns rapidly before the bread is finished baking, and falls off when you cut the loaf. The steam from the pan prevents that early drying, so your crust doesn't separate from the loaf, so you get a nice thick crust, which is why John promotes it as creating a crispy crust. The other thing that contributes to John's crispy crust is the oil in the bowl, which coats the outside of the dough. That also slows the drying of the crust, like the water bath, and it helps conduct the heat into the crust when the water does evaporate, which allows it to brown/crisp deeper into the loaf without burning.

Honest Review: 10/10. If someone's looking for perfectly crunchy and soft bread for sandwiches this is it! I just tried it and of course since I still don't have measurement tools I kind of eyeballed it, but it turned out amazing! I actually doubled the serving size because last time I made your baguettes they only lasted 1-2 days haha, they were very tasty!

Thought I would try this today as I needed to be in and out of the home all day doing various chores. This bread recipe is ideal when you have limited time as the yeast does all work for you. I did the final prove it in the baton and then into the oven following all your steps and timings. The loaf came out amazing. After cooling the texture was perfect and tasted divine. This recipe will certainly be first go-to on those busier days.
