Ingredients 1.5-2 LBS bone in chicken thighs or drums 3 tbs olive oil 1 tbs Cajun seasoning 1 tbs Garlic Powder 1 tbs onion powder 1 teaspoon cayenne pepper Salt & Pepper to taste 1/3 cup all purpose flour I small yellow onion sliced 1 tbs minced garlic 1 cup of diced celery 1 cup of diced carrots 3 cups chicken broth To pan add olive oil and heat pan on medium high Season chicken then add to pan Cook for 2-3 minutes on each side until it develops a golden brown color Remove from pan and add onion, celery, and carrots. Cook for 3 mins then add your garlic and cook for additional one minute. Add flour and cook for 1 minute. Add chicken broth and mix thoroughly. Bring to a boil. Once it begins to boil lower heat to low and cover and simmer until chicken is done and falling off the bone
Yah in central louisiana we make this lotta ppl just call it rice and gravy and its good and easy just do not be afraid of seasoning it a ton and throwing a little water in there to make it get a lil more evened out
Southern chicken looks good! I actually do the same recipe but I add white wine, tomatoe and tomatoe sauce and we have a cuban fricasee. Omit the cajun seasoning, you can leave the cayenne pepper. I will be trying this recipe tomorrow. Love me some chicken.
