How to make soft and spongy puto

  • Puto is a Filipino Steamed Cake that is served during the holidays or family gatherings. It has a lot of variety but this one is made of cake flour, egg, baking powder, and water.
    Here are the ingredients and recipes
    Puto Batter
    1 1/2cups cake flour
    1/2 cup sugar
    1 1 /2tsp baking powder
    1 cup of water
    Strain the cake flour well then combine the above ingredients and mix well until the batter becomes smooth. Set aside for a while and do the icing.
    In making the icing you need
    4 egg whites
    1/2 cup sugar
    Using a hand mixer, set at high speed and beat the egg whites in one direction to avoid the icing to be watery and produce a fairly stiff and foamy icing. When the egg whites become foamy, slowly combine the batter mixture together with the icing. You can add 1/2tsp of vanilla essence for the good aroma of the puto but it is optional. Transfer the puto mixture to the molder and put some cheese on top. Before steaming, be sure to cover the steamer with a cloth to avoid dripping of the water. Make sure that the lid of the steamer fits properly so the puto will not shrink. Steam for 20mins.
